Because the sound is defenitly not the same in the monitors and in the "in-ears" ! Plus, you can hear whatever you ask for in your in-ears, either just your voice or your guitar or more bass... which you cannot really do with monitors :)

Rubbish. I've run monitors for gigs and wedges can by as specific as in ears in the 'individual instrument level' and 'specific' sense. They have wedges as well for backup. When they have the in ears in they wouldn't hear the wedges anyway because they isolate the sound and cancel other noise. You see Danny lose his in ear pack in the beginning - without the wedges he'd have been lost. The wedges = backup for incase things like that happen :)
