You can change the callsign by changing the registration or callsign in simbrief. N251SB is the standard simbrief aircraft registration if you don't enter a custom one. Hope this helps!

Im pretty sure you can tune the frequencies just by clicking them on BATC. I think your callsign is set in the MFS menu before spawning in.
