traditional Irish broth is made by boiling a chicken with a half cup each of dried barley, red lentils and dried peas. A large chopped carrot an 2 chopped celery sticks, salt and pepper and water until chicken falls apart. We then remove, leave to cool and then shred the chicken. While chicken is cooling we take a large bunch each of curly parsley, flat leaf parsley and coriander, pluck the leaves off and add to stock. Bring back to boil and reduce to simmer for an hour. To serve add chicken to broth. Serve family style in a tureen with a big bowl of fluffy boiled potatoes with butter. The broth is traditionally made on Saturday to serve after church on Sunday lunch. I think the broth tastes even better Monday night tea with buttered brown Soda bread or crusty loaf.

Loved you weeknight Pho! I’ve made authentic and a cheater version and I think the cheater version is as good as the authentic in much less time. The key is really the base stock. If you are in the city, look for Pho bullion cubes in your Asian market. They really help.

I was very skeptical of your pho (Fff-uh, is how I like to pronounce it) but that looked delicious. I would definitely skip the bok choy as it’s not common in Pho but that looked amazing. We love to add hoisin sauce and sriracha in ours.

I have question for you I believe you said you have a family of four. Curious how much flour you buy at time for year. I make everything from scratch and trying to figure out how much family of three might need. Tried to track last year how much we used but through out year things got misplaced or forgotten to write on tracking list. Thank you.

There is actually 6 in our family, I think a lot depends on how much I bake from scratch. I think 5 pounds a week for 3 would be about right if you are making bread, english muffins etc just a guess though

Ok I am sound completely ignorant but what exactly is a Cornish hen? What does it taste like? have always been curious I know I sound really dumb but it was something i was never exposed to in my life...along with a lot of vegetables zucchini, squash, eggplant all of those..so any ideas would be extremely helpful I wanna change up my menu...everything looks amazing!!! Fun factI can't cook with anise it reminds me of chubby spiders and it freaks me out 😂
