Haven’t watched the video yet- but so excited you did this!!! Would love to see more of these! Also would love to see any kind out workout progression ideas for us retired runners. Like modified versions of the D1 workouts. I know you can’t give away your team secrets. But I think all of us like to pretend that we’re also on the team with you!

Emma, If you leave your beet whole and either wrap in foil or put in a covered dish it will cook along with your sweet potatoes. When it comes out just cut and eat. It ends up way sweeter cause the juice stays in, is easier to prep and doesn't stain everything in the kitchen.

Try preheating the oven to 420 degrees instead of 425. Amazingly, this slight decrease in temperature makes it infinitely more lit

I usually cook sweet potatoes in the microwave for about 7 minutes and then cut them in half for meal prep. Im too impatient to make sweat potatoes in the oven lol.
