Cajun Shrimp Kabobs:
7 oz cooked, tail on shrimp
1/2 summer squash
1/2 cup zucchini
2 cups bell pepper (any color)
1 tsp Olive Oil
1/2 tsp minced garlic
1/2 tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp paprika
1 tsp lemon juice
Instructions:
1. Throw all spices, oil, lemon juice, and shrimp into a Ziploc bag
2. shake and throw in the fridge to marinate.
3. When ready to grill place shrimp and veggies on a skewer.
4. Warm up grill and grill veggies for 10-15 minutes. Grill shrimp for 6-8 minutes. You can also grill these in the oven by preheating to 400 degrees. Veggies: 35-40 Shrimp: 8-10
5. Enjoy!
