...and there is a regional butcher's specialty made from blood which is called "Panhas" and reminds even more of a black pudding... it's made in squared molds and cut in thick slices, finally to be fried in a pan.

Panhas is grrreat! I also know a spanish Blutwurst/Black Pudding and the French have something similiar afaik. I think this could be found in many cultures but has come a little bit out of fashion due to the international Hamburger-Steak-Schnitzel culture and the general focus on prime cuts of every kind of meat with growing wealth.

I think Leberkäs originated from Laiberkas. And "Laib" means "loaf", which describes the shape of the meat rather than whether it contains liver.

Sülze? Ah, we have that here in Sweden as well. Sylta! Delicious! My mother used to serve it with a generous sprinkling of spirit vinegar on top, to give it some spice and bite, and cold boiled potatoes. And Finnish dark rye bread on the side. It was more like a snack or a light summer lunch than a real meal. Fond memories! And I once bought a sandwich in Denmark, without knowing what it was really, that turned out to be a thin slice of very dark rye bread with a thick slice of Sülze on top. I think it was called something like "dyrelegerens smörrebröd", which I think means "the veterinarians sandwich". But I understand very little Danish, so what do I know. Anyway, they also seem to have this delicious foodstuff!

It's by itself not a taste explosion. Around here we eat it with raw onion rings and a dressing from vinegar mixed with water and salt and pepper. The more meaty suelze is severd as a main dish with fried potatoes (Bratkartoffeln) on the side. North Bavaria, Frankonia.

So true! I made that experience years ago. I was just preparing a "Mettbrötchen" for myself in the presence of some US friends, not being aware of the fact that this is a No-Go for them. They probably expected I would put the whole thing into the oven. When they saw me going to eat it right away, They screamed "You are not going to eat that, are you?" You should have seen their faces when I did it anyway. 😆

One more: When I lived in Minneapolis, there was some news item on TV that talked about Leberkaese. The reporters translated it as "liver cheese" and made all kinds of nasty faces and comments. I was screaming at the TV, "It's neither liver nor cheese." You would think that a state with so many German immigrants would do a little digging before reporting on "liver cheese," but I was wrong.

Also, the "Leber" part doesn't originate from liver but from "Laib" = loaf. Laiberkas, Laiberkäs. Kas was an old word for clotted material and it was formed and baked as a loaf. So not only a dairy product.

Thw bread used to be good, but hardly any bakeries still make traditional bread, it's too time consuming and therefor not cost effective (dough can take up to 24h to mature, in some cases even longer, before loafs are formed and put in the oven). The earlier industrial products were still quite good, but what is packed and sold as bread nowadays is a shame, actually. At least for a bread lover. For someone not used to the great variety and the taste, this might still be kind of an illumination, but trust me, if you have the chance to eat fresh and real traditionally manufactured bread, you'll see what I mean. Plus, many of the modern health problems regarding wheat flour come from industrialised products, as the brad will get more easily digestible the longer the dough matures. We have a bakery here where you can actually stand at the window and watch how everything is hand made and fresh. When ever I buy a rustic walnut 'baguette' (not very French, pretty Germanized and made with mainly spelt flour), still warm from the oven, all I need is French salted butter along with it (most butter to me doesn't taste much of butter anymore to me, thus whenever I do buy one it's Président, as it's the only one I found in German super markets that still tastes great). Perfect dinner and so satisfying in all regards.

I was surprised when Rachel went to take a bite out of the Mettbrötchen. Most Brits I know here won’t eat them. Raw meat in a bread roll? -er - no thanks! Then I saw Rachel chickened out. Aha! I thought so!! By the way, “Blutwurst” or blood-sausage is called black-sausage in England and they prefer it fried. We have “Sulze” in England, it’s called Souse (Almost certainly from the same etymology!). A lot of people like it!

As a German vegan myself, I can say it was sometimes difficult finding vegan options while meat is so prevalent in German culinary culture, but luckily there is a growing vegan movement in Germany that is getting very popular especially among the younger generation and since a couple of years you can also find a lot of vegan substitute products in supermarkets. My parents were also very tolerant when I decided to become vegan and my mother also became vegetarian a while after me.

Ourania Eirini - It is not exactly the same. Black pudding contains pearl barley, which makes it dryer and firmer than Blutwurst, but consistency apart taste wise it is as close as it gets.

Leberkäse has got nothing to do with "Leber" (=Liver). It comes from the old german word "laben, sich laben" (erquicken, schlemmen), that means to feast or to refresh. So the origin is "Laberkäse". I assume that "Käse" (=cheese) is related to the look with the holes, but I don't know exactly.

@Martin V. Thanks Martin! The bavarian word *Kas* (german: Käse) means something like: "edible mass". A good example is the bavarian-austrian *Erdäpfel-Kas*, a spread with potatoes but without cheese.

Auch, wenn Mett schon fettig genug ist - Da muß 'Anti-Quietsch' drunter (Butter/Margarine). Was auch sehr gut geht - Braten als Aufschnitt - dann noch eine Scheibe Käse drauf - passt immer :)

Don't get me wrong: I love meat like any other young man, but all these weird meat concoctions and derivatives are not for me (although I am german). I stick to meats the way they came from the animal. I have experienced a very positive influence on my health and overall well being with the change to my current diet (probably most comparable to paleo I'd guess). So I don't see myself changing these newfound eating habits too soon.

Holy crap, did that ever make me hungry! Side note 1: My sister-in-law calls Leberkaese "glorified baloney" and I'm pretty sure she's right. It's very similar to American baloney. Side note 2: Suelze. . .mmmmmm. LOVE IT!

@@dweuromaxx did you know that during the 10th century in the Philippines, when someone steals, violated an important rule or exploited anyone. Feeding a Filipino with raw meat was the punishment and after doing that, the convicted will be punished next by pushing their arms into boiling water until the convict dies from burns.

My mum's mum was from Germany and she always had what she called Wust and I loved it. But I have yet to come across anything labelled as Wust that tastes the same. The search continues

Actually there is Leberkäse ,or as we Bavarians call it "Leberkas", containing cheese we call it "Kasleberkas" but it isn't that common

Here in southwestern Germany, in my city, there was a contest to find out which sausage was best available in the Cathedral square. To the general surprise, the winner was a vegetarian sausage !! It was very funny to follow the discussions and comments from readers. Meat eaters said it wasn't real sausage! A vegetarian replied that the ingredient didn't matter, the important thing was the format !! :) Another carnivore then replied that in that case a banana could be considered a sausage! General laughter !! I personally reduced meat consumption drastically and soon I want to be absolutely Vegan. Excellent work Rachel, your videos are very interesting and fun.

Vegetable-Sülze ist the best "meat" you can get. It's not really meat anymore, but there's still the gelatin in there.

funny you meation no cheese in Leberäse. One of the most popular variations in Austria is Käseleberkäs. there is little chunks of Ckeese in the leberäs that oozes out when it is hot

As a German descendant, I don't find it very surprising it's practically in my DNA. I would never do it but my mom has attempted to become vegetarian several times, all ending with a trip to the hospital and a doctor telling her she needs more red meat. Sometimes, no amount of caffeine will get me going and it'll be like that for days.Then I'll realize I haven't had a hamburger in a while or so, so I'll go down to the nearest hamburger place and grab something with a double patty and I'll feel 100% better the next morning. I guess I just have low iron.

Had a bad encounter with this: went to a sandwich shop and pointed to some sandwich which I thought had salami (red-ish meat with white dots). They put it in a bag for me to take away. later bit into it without looking to my horrid surprise it was just raw minced meat =(
