Hi Matt. Absolutely love this show and complete game changer when I last made the Alabama white sauce turkey last year! So quick question if you have the time. Does cooking at 225 with super smoke for the 1st hour and then finishing at 325 gonna have much change to the flavor. I know obviously will add time to the cook. Hey just an FYI. Your Pecan syrup recipe is different then what is said in the video. My guess is the recipe in the video is right becasue the syrup looks thicker. You might up the website to say 3C brown sugar not 1C brown sugar that is on the website. Drinking one tonight.. Loving it.

Matt, not sure if y'all grow these in Texas or not, but if you can get your hands on some ramps for one of your recipes you won't be disappointed. A ramp is sort of a mix between a wild onion and garlic. Amazing flavor.

What is instead of thinning the gravy out you just use the pureed garlic to with some herbs and a little flour to make a paste to crust the outside of a prime rib? My only fear would be the garlic over cooking but I think at the right temp it could be done, and tasty!

I made this recipe for Thanksgiving. But without the garlic gravy. How in the world did you get the butter to stick to the turkey? That was probably the most stressful part of the cook for me. I could not get the butter to stick to the turkey when I would rub it on, it was just stick to my hand and not the turkey. But at the end of the day, everybody loved it. Thanks, Matt.
