Most of the field work I do I use a havalon piranta and my sawzall. Detail work and deboning is where the meatcrafter shines .

Tbh, i almost only use my victorinox ranger grip. Does all the thinhs any fixed blade does. Reason is, i walk a lot, i i don't want to carry the whole shebang with me. Thx for the review

For processing game I’ve been using Zwilling Twin Master curved boning knife. Also have the equivalent Dexter. Just picked up the Benchmade Fishcrafter for my fillet work. Might demote my Buck Silver Creek fillet knife to boning duty. Blade isn’t as flexible as I would prefer for fillet work but still has a good edge on it imo.

It's an amazing knife...and FINALLY my wife has a good knife she will use in the kitchen...YES, I asked to please use it rather than a steak knife to slice veggies, cheese, and meats. It was a champ over the 4th of July weekend slicing BBQ. Having so much fun with it! I'm in Portland, Oregon so I'll be taking advantage of the "Sharp For Life" service...just walk on in to their retail shop.

Persian style is more exact. It’s been around here before Iron age actually. Thanks for beautiful useful video and happy to see a great western performing this piece of art. Going to save up

Currently use a Bubba blade 7”taper flex filet knife for processing game/trimming bbq. Plan on getting the meatcrafter by deer season

Man did you ever make a good investment. These Rinella editions have been going on eBay for $1000-1200. Now they re-released it with all the same specs but not the Rinella edition at $270.

I'm a knife guy and machinist; watching different companies working with S45VN is interesting. Depending on heat-treatment, S45VN could be the sweetspot for knife steels. Benchmade did well with their S90 knives, but they seem to have issues with thicker S30 knives chipping. They always seem to nail it with the thinner knives in general. $300 isn't crazy since that steel is fairly new to the market. As for the angle; that's purely due to the blade being so thin. From what I've read, S45VN will hold an edge for a long time. However; short of a diamond stone, it will be hell to sharpen (especially at that angle). It's supposed to be a step up from S35VN, which has served me well. I'll sub for a follow up after extended use.

Wow excellent feedback! I was curious what someone's take would be that has some more knowledge of these steels. I'll definitely be doing a follow up. So far, I haven't been super impressed with the edge holding. I havent had to sharpen it yet, but can tell it's dulling after doing some simple meat trimming. We'll see though.

@@MontanaJeff I know that people are always going to search for the do-it-all blade; but as of now, nothing can beat a purpose-built knife. Stainless is my preference, but there are so many variables: purpose, blade thickness, and the RH value being primary. I'm still pretty pro-Benchmade for their Axis Lock. I can appreciate their continuous pursuit with R&D as well. They just need to focus more on heat treatment with their fixed blades. After thinking about the knife in question; the flexibility makes sense that edge retention will be poor. Blade HQ has a pretty easy to read (but basic) guide to knife steels that is worth checking out. I would be interested to try the Benchmade Altitude for field dressing, but the price keeps me second guessing. Outside that, it checks all the boxes.

@@spartan8390 they say Benchmade is not bringing alloys to full potential in order to ward off warranty repair n replacement, but with flexibility being wanted in this knife, the hardness won't be full anyway.

agreed. all things considered, 300$ is INSANE. and the steel is definitely not a factor, as even Bark River, who are a much much smaller company selling considerably fewer knives, recently did a run of a knife in S45VN and it started at well below 300$. considering steel and everything, this is MAYBE a 200$ knife. maybe. with S35 at 130-150$ and S45 at 180$ it would've been awesome, and pretty much everyone even remotely interested in such a knife would've bought it (i would've already, but at half the price i'd rather get a BRK Mini Kalahari Sportsman in CPM154 or AEBL). at 300$ this will be a very, very rare sight

I agree with everything you said! That Mini Kalahari is a stud knife too. It's on my list for the future. Wish Benchmade could have going this under $200! It sure is a sweet design.

@Florida Dad educate yourself: www.dlttrading.com/mini-gunny-s45vn-black-canvas-micarta-76. starting at 217$, in case you can't read. and that's a small run by a company the fraction of the size of Benchmade (i.e. "economy of scale" in case you have no idea what i'm talking about, which seems to be the case). it is absolutely insane for a relatively plain fillet knife in a new steel that's only marginally better than s35vn (in the hands of big scale productions. i'm not talking about small custom makers like BBB or KK who can extract much more performance with their ht wizardry), by a company that notoriously botches heat treats on a regular basis on anything more "complicated" than s30v. it is absolutely insane and only benchamade fanboys can defend this ridiculousness (in before "buh buh buh i'm not a bm fanbooooy". lol)

Like you I thought the price point was a bit steep, however, I spoke with a buddy who's a Chef. He said the knife is actually priced at a competitive price point. Most Chefs do own knives that start at $300. But I like your $150 much better.

Oh interesting! $300 is just a lot of money for us everyday folks that don't use it professionally. That said, it's possible this is the last chef knife you'll own.

That is super disappointing. Im sure they will do another run...probably by mid summer. I would assume the Rona has effected some of this.

300 is MSRP this one isn't budging 300i just can't see it would get one at 200 hopefully prices drop soon

I don’t know if this version is still available (I got one too), but the latest Benchmade Meatcrafter has a hideous orange handle and a inferior steel. I had no idea this version was limited, but its seems to be at this point.

Ya, unfortunately it was limited. I havent had a chance to handle the new one. I will say it's a lot cheaper (price wise) so that's a plus. I do love the handle on this one much better though.

CPM-154 is still a pretty premium steel, the handle color and material is much more practical for its intended usage. S45VN might stay hold an edge slightly longer, but not enough to justify the price difference ($100-120 vs $300-400). As a tool, not a vanity piece or work of art, the cheaper version is the obvious choice.

Shun knives are pretty nice. More than likely a lot cheaper than this as well. Depending on the knife, steel may not be to the same level as this one though.

300 bucks isn't bad for what your gonna use it for. Alot of decent pocket kinfes are around 200 zt, Benchmade. An they are like 3 in blade.. for the size and design 300 isn't bad. Now the station knife is 1,500 that's too much its a beautiful knife and would do alot in the kitchen but it's 5 times that..

I agree to a point. For the average user, I think they could get the same use out of a knife 1/3 the price and not know the difference. That said, I have no regrets buying this one. The new version Benchmade has that is half the price just doesn't have the beauty this bad boy has.

This is so typical Benchmade. Create buzz, do a limited run, then let them sell out. You'll see them pop up again by summer I would guess. As for selling mine, I love it to much! Now that ive bit the bullet and paid the money, I love it!

They are selling this knife, at a more affordable price point but with a rubberized handle in high viz orange. Seems like a much better purchase due to price point and the high viz handle

Ya, not worth it. The new one they have out with the orange handle seems like a decent deal. I love this one. I wouldnt spend a premium on it though.
