Hello, my dear lovelies. Christmas day is about a week away, and I am super excited to share with you my favourite special dish that we eat on Christmas eve in the Philippines. This dish is called embutido. It's a pork meatloaf that can be cooked steamed or baked. This embutido is very popular on holidays, and it became a tradition to eat this specifically during the feast on the eve of Christmas day.
Embutido is super easy to make and you can prepare this ahead to freeze. We usually fry the leftovers, and it is still so good that it melts in your mouth. I really like to make this every Christmas even when I moved back to London. It reminds me of my childhood Christmas moments with my family. I hope you can try this at home too because you will surely love it.
Here are the ingredients you can prepare ahead for this recipe:
700 grams of ground Pork
1 large Egg
1/2 tsp of Pepper
1/2 tsp of Salt
1/2 tsp of Garlic Granules
4 mini Sweet Pepper or 1 large Bell Pepper
1 medium White Onion
1 medium Carrot
1/3 cup of Evaporated Milk
1/2 cup of grated Cheddar Cheese (you can add this for garnish or mix with the meatloaf)
1/4 cup of Pickled Relish (you can add this for garnish or mix with the meatloaf)
