Medlar Jelly recipe

We had medlar trees in our garden in all my life but we only used them for fresh eating but now we have 3 trees with huge amounts of fruits so I will definitely try to preserve them this year! Thank you for the recipe!

We've seen these on Morning Prayer from Canterbury Cathedral (17 Nov 2020) and also Compline from Canterbury Cathedral, earlier this month, but have never actually eaten any medlar jelly so this is a great lesson and we thank you.
