Your reaction of oJinx, Vi and Caitlyn's grown up looks is good fun :) Generally, it's assumed that the time skip was around 7 years give or take. The showrunners don't want to give exact timeframes. So Vi and Cait are in their early 20s, Jinx late teens roughly.

The Golden Compass is the first book of the "His Dark Materials" trilogy. You should check out the HBO adaptation of the entire trilogy.
