The Year 2023 was very unique to me as I switched from being an active stock market investor to a passive one and took on social media platforms to share my talent. As we approach the end of the year, I want to offer my sincere thanks to all who appreciated and supported me on my new journey.

These delicious and healthy chicken subs are a big hit in my family. I make a batch of buns and the chicken filling for dinner one day and the leftovers come in handy for lunch the next day. I hope you give it a try.

MEK Chicken Subs
For the marinade:
2 tbsp tomato paste
Juice of half lemon
2 tbsp olive oil
1 tsp black pepper
½ tsp paprika powder
¼ tsp red chili flakes
1 tsp salt
½ tsp dry oregano leaves
Combine all the marinade ingredients.
4 chicken breast- 1kg (cut into chunks)
1 onion sliced
2 tomatoes
2 tbsp olive oil
For the spread:
¼ cup mayo
¼ cup ketchup
3 tbsp mustard paste
2 tbsp relish
Black pepper
Sub buns
Lettuce leaves
Tomato slices
Dill pickles
Fresh mozzarella slices
Combine all the marinade ingredients and add to the chicken pieces. Refrigerate and marinate for an hour or overnight.
Add 2 tbsp oil to a pan and add onion to it. Add marinated chicken to it and start sauteing. Fry for a few minutes till the water dries. Now add diced tomatoes to it and continue cooking.
Cook till the chicken is fully cooked. Don't dry the chicken water completely. Remove from heat and shred it by hand or with a pestle.
Combine the sauce ingredients and mix it well. Slice the sub-buns and spread a generous amount of sauce on both sides. Arrange the chicken filling on one side of the bun. Arrange mozzarella slices on it and broil till melted. Be careful not to burn it.
Arrange lettuce, tomatoes, and pickles on it. Close the sandwich and wrap it in parchment paper. Serve with fries and enjoy!❤️
