In this video, I will prepare a simple Chicken salad and Ham Salad that will have you thinking, “This is exactly like Grandma used to make it!” . This isn't a how-to it's a how-I make these salads. Tons of things you can add to these salads but my family loves the simplicity of these recipes.

My mother used to add bologna to her ham salad. She loved the ham salad she would get from A&P and asked the deli lady how it was made. The lady shared that the secret ingredient was adding bologna to it. I remember that it was so good. I’m from Kentucky and your story about the cereal reminded me of our trip back from New Mexico to Kentucky. We had gone out there on a train, but came home on the bus. Mom had bought that variety pack of those little cereal boxes to eat on the way home. Every morning when the bus would pull into a station, Mom would buy us milk to pour into those little boxes. I remember how the boxes split down the middle and the sides folded back to form a bowl. Thank you for reminding me of some of my good memories. Enjoy your vacation! ❤️

Love sandwich salads - tuna, chicken, ham, etc. Also loved your vacation story from your youth. I'm a little younger than you, but we traveled in a very similar way. I remember those little boxes of cereal, mom packing either cold fried chicken or sandwich meat for us to have for lunch which would happen at a rest stop or park along the way. Dad liked to stop for breakfast when we travelled, but my sisters all got carsick, so they had to have something to eat before we hit the road. We woke up at 4, and we were on the road by 5. My sisters and brother all went to sleep as soon as they got in the car, but I sat in the seat behind my dad, and I just stared out the window the whole trip. I still do the same thing if I'm not the driver. Hope y'all have a great trip!

I just made chicken salad today. The only thing I add is chopped apple to mine. I love the sweetness of an apple in there. I have never thought to make ham salad for sandwiches. I will have to try that next time I have leftover ham. Thanks a bunch and I love your stories!

I remember our summer vacations to Myrtle Beach, Carolina Beach or Topsail Beach when I was growing up. Many times my great grandma would have a basket of fried chicken & potato salad to eat. I also remember my grandma making chicken salad to take very similar to yours. Those are some sweet memories!

Mama made dried chicken and potato salad for every trip! Sometimes she made deviled eggs! Thank you for that reminder. An Air Force cook I knew made the best chicken salad. He would take the breading off left over fried chicken. I would have never tried it if I had known. The salad always tasted extra “chickeny”.

There must be something wrong with me. Because even since childhood, and I'm an elderly lady now, I never could eat ham salad. But now I can eat chicken salad all day long.

You are so right about traveling back in the day. I grew up in Maryland, but my parents' family lived in West Virginia. It would take us 12 hours to get there, no interstate roads. Small towns, no fast food, restaurant closed at 5pm, lucky if you could find a gas station open. Now the drive takes 5 hrs. I love hearing you talk about your childhood. I have both your cookbooks, but always watch your videos.❤

Chicken, mayo, salt, pepper. A splash of lemon juice, chopped pecans, finely diced celery and chopped apples or chopped red grapes. That's it. Serve on croissants with a piece of crisp lettuce. Perfection. ❤ Onions, eggs, and relish overpower the taste in my opinion.

You and KK are on a roll today! Your stories remind me of the summers my family would drive the 12 hours from Virginia to Michigan to visit relatives. At some point we had one of those station wagons with three rows of seats, with the third one facing the back. We would make faces at the car facing us and get in trouble with our parents. We also had the variety cereal packs you could pour milk into. We would always stop at Stuckey’s for pecan logs or turtles. Yum! Thanks for giving us all a great time and great recipes!!❤️❤️

Meme, I love to watch you cook. You cook like I do. I was taught by watching and cooking with my mother, my Memaw, my grandma & my Aunt Maggie. Food was ready when it sounded ready, just like you knew by the way the salad sounded as you mixed it. It was creamy enough. I cook that way now by sound, look, and taste. Like when frying chicken, you know its ready when it sounds ready. When the popping slows, how it sounds when frying when its done. Neither of those wonderful women ever measured! I don't either, only when baking.

What a gorgeous lady she is! The colour of her top just popped as vibrantly as her sunny personality. Those salads looked so good. I totally was thinking about dill pickle relish with the ham version. I’d even add some yellow mustard to that one, and I’ve added Dijon to my chicken salad sandwiches before. Never tried the sweet relish or chopped eggs but now I think I will.

I remember my grandma and my mom would make ham sandwiches similar to yours but no eggs. They would cut the sandwiches into small triangles for baby showers and baptisms or wedding showers. And they would pile them high on couple of trays. I remember they sure were good! I love those older recipes.

My momma used to make a beef salad too. It was so good using a roast (already cooked) cut up into small pieces. she used one of those food grinders you would clamp onto a tabletop. I have hers and still use it.

I use rotisserie chickens for all dishes that call for chicken...I can get one for $4.99 at SAMS and a raw chicken is at least $8. We live in Florida, and these make great meals because it's too hot to cook in the kitchen :)

In the 60s we where traveling with a pop up camper to Florida from Ct. , before I 95 was there . We got stuck Near Florence SC for three days when our water pump went. Good times , good times
