@@h2oski1200 No red peppers, fresh peeled tomatoes instead of canned ones as John states in the video, typically only hot green peppers are used, also people are split into two groups on whether to use onions in this dish (some use garlic).

Turk here. And a long time fan. You absolutely hit a very sweet spot about that onion comment at the beginning. It's a big ongoing debate here but just as you said, and maybe also since onions can be bad for sensitive stomachs early in the morning, the more widely accepted version for breakfast is without onions. I however prefer them with onions in the morning as well :D

Poland is often sarcastically called the "land of blooming onion". As a Pole, few things make me happier than the inclusion of fried onions in a dish. As you can probably imagine, I'm very much in the "onion in menemen" camp.

@@FireflyActualIf you are going to eat menemen for breakfast before going to work, make it without onion. This way your mouth and sweat will not smell of onion. If you are going to eat it for dinner, you can make it with as much onion as you want. 🙂🤷🏻

@@FireflyActual if you're around onions enough, you know the drill. I also have reflux and ulcer just as any 40 year old would have. In the morning? cook them enough to get them pacifized. In the mid day, caramelized onions are way to go. For dinner? Heck give me some fresh sliced red onions with olive oil and aceto balsamico on top!

Turkish beef sausage is closer to Spanish chorizo than salami in that it's made with pepper paste and garlic. Two other alternative meat products that are commonly added to menemen are a type of beef/lamb confit, "kavurma", that's packed in cylinders and eaten as a cold cut, and Turkish pastrami, "pastırma", that's cured in a spice paste dominated by fenugreek. Great recipe as always, Chef John! You summarized the national menemen debates beautifully. My personal opinion is that adding onion is a sin. Anyone who wants to eat red salsa can move to Mexico :P

There's a dish named Shakshuka in Turkey too, but its made of fried eggplants (sometimes peppers, zuccini and other vegetables too), with tomato sauce. I have no idea how is it related with Arabic dish similar to menemen. (and before you ask; in Turkish, eggplant word isn't etymologically related to egg. Patlıcan/yumurta)

In my family we do a 'huevos rancheros' that I'm not at all sure is authentic, but it is incredibly similar to this, with 2 small adjustments - flour tortillas and not scrambling the eggs into things. This dish is insanely satisfying

I like your rendition of the dish. Menemen is so modular, you can do almost anything with it to suit your tastes. I like your addition of jack cheese. I think the turkish cheese you meant is kaskaval and it is indeed like a firmer, saltier and all around more flavorful mozzarella. I usually don't use cheese in the dish, but sometimes I eat it with feta or crumble some over the finished dish.

About cheese: around the Aegean coast, the most popular cheese to use would be İzmir tulum cheese. Since it is difficult to find abroad, the closest alternative is the kefalotyri cheese from the Greek side of the Aegean. The second most popular cheese would be kaşar. Again, if you can't find it, the Greek kasseri is practically the same cheese. If you cannot find kasseri either, I'd recommend provolone. Kaşar, kasseri, and provolone are "pasta filata" cheeses, they have similar texture and taste.

Beautifully done Chef John. Looks magnificent. It's better to have some tomato chunks in the dish for texture imo but it's no biggie. I personally like a more tight version where I cook the water out and caramelize the tomato by stirring frequently with butter but this one looks very similar to how my mom used to make it so I'm sure it still tastes great :)

I’ve been making something similar using salsa, preferably fresh salsa. I thought I made it up, but it is pretty much what you made. Sometimes I don’t stir the eggs and then eat it with the yolks still runny. Lately I’ve been cooking chopped zucchini and/or mushrooms in the salsa before adding the eggs.

Mozzarella is a buffalo cheese, which is rare in Turkey. Cheese we use for menemen is more similar to cheddar (not matured) or Bulgarian Kashkaval. Mozzarella however would go well too. I prefer the well scrambled version, however most recipes recommend not to scramble, but just mix a bit.

If you can get it somehow in the US, I recommend trying to add some Sucuk (Turkish sausage with garlic). It is fine to do it without (to keep vegetarian for example), but my family loves it with Sucuk for dinner.
