Meringue Peach Cake Recipe:
for the crust:
1 1/4 cups of flour,
1/4 cup of cocoa,
125 g of cold butter, diced,
1/3 cup of powdered sugar,
3 egg yolks,
1 tsp of baking powder,
for the meringue:
150 g of sugar
3 egg whites,
1 tsp of potato starch
for the filling:
1 can of peaches (820 g)
1 tbsp of potato starch (or corn starch),
few tsp of bread crumbs
some powdered sugar for dusting the cake or some chocolate ganache
Prepare the crust: mix the flour with cocoa, powdered sugar, baking powder and diced butter, rub in with your fingers (the butter should form very small crumbs). Add egg yolks and knead briefly, until smooth. Divide the crust into two pieces. Form one into a log and chill in the freezer for about 10 minutes or until cold and firm enough to grate.
Press second piece of the pastry into the bottom of the springform pan covered witch baking paper (23cm). Prick with a fork and let it chill, until ready to use. You can place it into the freezer for about 10 to 15 minutes - it should be very cold before baking.
Mix drained, chopped peaches with starch.
Sprinle the crust in a pan with bread crumbs. Add fruit.
Beat the egg whites, until stiff peaks form. Gradually, spoon by spoon, add sugar - the mixture should be thick and glossy. Smear the meringue on top of the berries. Grate a pastry log on top. Bake for about 45 minutes in 180C. You can cover the top of the cake with baking paper, if browns too quickly. Sprinkle with some powdered sugar or galze with some chocolate ganache. Enjoy:)
