How to restrict download for documents and videos at folder level in document library.

You can do that with the Share button. Choose the 'People in with the link> and uncheck 'Allow editing' and then turn 'block download' on.

I used to have a section next to where it says return to classic sharepoint that told me the number of files or items inside the folder I was currently in. Now its gone and I don't know how to get it back. Does anyone know how or what setting that is?

Very nice, well done! You made this very clear and I understood it. My number one concern is adding keywords or tags to hundreds of photos from around the world in a Library of photos on a Sharepoint site. Can you tell me what is the BEST way to do that? Should I use the "List" feature to store the keywords then make a column in the Photos Library to which each photo can be tagged? Or should I use something like a "Lookup" column? I've tried making a Choice List column, which also works OK. Also, I want to have a column that will reflect the metadata that is embedded in the photo before it's uploaded to the library; how to do that? (I am trying to wrap my 65-yr-old brain around all the terminology of sharepoint and metadata is daunting to say the least; when I still think in terms of a filing cabinet, drawers, folders and files, haha!)

No - just hide the library from navigation...? Otherwise if you want to archive just some items, add a column, with True or False settings on it to indicate Archived or Actve. Then you can filter based on those values.
