Basically, thaw overnight in the fridge. Nice when a classic old-school traditional method still holds up as the best.

Yes indeed! The thaw plate was a surprising success too.

When in a hurry, I thaw in the microwave but for only about 4 minutes (depends on the thickness). I do it till it's still a bit stiff in the middle, and not pre-cooked at all. Then I let it sit for another 10 minutes. This method takes takes a total of less than 15 minutes.

“Surprisingly palatable” is a ringing endorsement. Save that method for well done. Hahaha

If you defrost in the microwave, flip it half way and stop before parts of it it reaches a cooking temperature and just thaw it in the pan for the remainder, would you be able to tell the difference?

First don't freeze steak you animals. Second, if there's some frozen component then stick it in a Microwave, choose defrost setting and blast it for 30-40 seconds. This will break down the ice in the middle enough for normal room temperature convection to do its job. Let it sit for a couple of hours and done. Don't microwave it on full blast for 7 minutes.
