Great, now Im hungry again. In central Europe, up until the seventeenth century, the carp was considered to be a 'royal' fish; designated to be eaten mostly by rich people and nobles. A very classic version was to gut and clean the fish, then replace the scales with potato chips and slowly roast or bake it, serving it whole as center piece of a banquet. There are still many 'classic' oriented restaurants which serve whole baked carp.

This species of carp feed on plankton and algae. They are not bottom feeders, but mid and upper level feeders. While related to the typical carp people think of, they are different.

Great idea! I am in Illinois where you don’t need a fishing pole to catch them. They just jump right into the boat!

Try filleting backwards. It works well on carp. Start at the tail and work your way forward towards the head. The ribs on a regular carp are aligned in a way that the knife glides right through! The first thing you got to do also Sir is cut the gills right after you boat him and hold em upside down ! After 20 seconds or so that fish will start pumping until it's emptied of blood. Blood is what makes for the muddy tast in a carp! Bleed it well and the meat goes sweet! Enjoyed the video. Oh when you do a fillet, it's better to grab the skin lay your knife down flat on the table and wiggle the skin walking it back and forth as you pull it across your still blade! Been doing it for 40 years .😎

I want you to know that this is ABSOLUTELY THE BEST video I've seen about cleaning and processing an Asian Carp. I think most fishermen are aware of the danger they are to our native species, but what to do with them is the issue. When I was a boy, men would fish the Ohio River and catch big cats - then just toss them in the weeds! I'm not comfortable in treating game so disrespectfully...what a blessing to find your video. Thanks.

People are ignorant when it comes to asian carp and carp in general. When you clean and cook these fish properly, like this gentlemen did, they are a very good fish to eat. I suggest all my fellow fishermen give them a try. Just clean and cook them properly and you will love it. Good vide sir. Im with you and will share this video.

We steam it with kimchi and the taste is really good The fish is quite fatty and the slightly sour kimchi help with the taste

I've had Asian carp a buddy caught in a snagging contest his fish was 2nd place at 59 lbs. Excellent table fare. I was impressed how good it tasted

From Brooklyn here and very into how environmental issues are handled in southern regions of the country so it's very cool to see the quality of the content you both created on this particular fish and the issues surrounding it in the local habitats down by your way and how the meat can be used as something palatable for the American tastes. When I heard, "just like crabmeat" I was sold. Keep up the good work! We have fishing up here but nothing like what you lucky folks have down there. Nothing like being out on the water and enjoying nature and working to preserve its greatness. Kudos to you!

When I was in China they cooked this fish for hot pot ..my mom loves this fish she deep frieds it and I will make sweet and sour sauce or make a garlic sauce

I have seen a number of readouts from fish finder machines, the Asian carp are en-masse like a solid layer at a depth of twenty feet, millions of them. I am entirely new to this Asian carp epidemic, I am going to bring some friends along for some cast netting retrieval help, an excellent video, thank you for making this.

I had no idea that they turn out like that wow! The people up here at Barkley and Ky Dam snag for them and come from all over the US to bowfish here, and they just throw them on the bank or let them float down the cumberland. They have to be a great bait to use bc they are really bloody even after you sprayed them down. Im have to try it, Great video fello Tennesseean.

I made pretty much the same dish with catfish. I found Bang Bang Sauce( really) in the Chinese Section Grocery store. It complimented the dish with spicey sweet flavor. Good video

This is just great, my mouth is literally watering at the thought of that fish being made into a fillet with slices of lemon on the side of your plate, and a nice tub of '''' tarter sauce ''''. That means one fish fillet -- maybe breaded -- I'm going to need another 3 or 4 more fillets after watching this just to get me through the day. To see that that fish fillet is in this video and I'm way over here in Washington state is sooooo cruel, I mean I can literally smell the aroma of that fish slowly cooking over a nicely oiled grill with Olive Oil and gently sprinkling some seasonings over that fish as it slowly cooks over the grill. Constantly making sure that my blue flame is adjusted just right in order to make sure that my fish cooks up just right. In the mean time making sure that my tarter sauce is full and ample supply and also my lemon slices are in good supply also. BON APETITE !!!!!!!!!!

That red meat is just fine. All you need to do is remove the scales not necessarily the entire skin. The skin is good. Also you don't need to leave the rib. Let the rib bones be a part of the cut and when it's cook, the rib bones can be easily remove as they are quite large and it will give you a lot more meat.

I know that Panco bread crumbs are great for salmon paddies. Give it a try sometime. So far this presentation is VERY interesting. Thanks for sharing your fishing technique, cleaning and meal prep. I am looking forward to giving this a try. And I found it humorous that every time Victoria pulled the fish out of the oven it was 80% done.

I enjoyed the video and most of everyone's comments. I first saw this species of fish in Louisiana while on a alligator hunt. Amazing fish and we caught one to try. My impression was I liked it better than gar but not as much as alligator. I had it grilled and fried and prefer it fried. Im looking forward to another opportunity to try this fish again.

My grandpa said his grandma used to boil carp in a pot outside until it was cooked. She would then take it inside separate the bones from meat. She would then season it up add some bread crumbs and fry them into patties, she would then top it off with some powder chili peppers. He said it was very good I believe him because he usually hates eating fish and seafood...

Instead of renaming them and trying to advertise, you should find a way to export them to Asia. We (Vietnamese) are buying them in the market for about 1 dollar for a pound, the fillet is double. Heard it costs twice as much in China lol

Green onion, soy cause, fish sauce, red pepper, cilantro, garlic. Marinade it in tinfoil and steam up that meat, Drooling now.

Carp is great smoked. My dad would just cut it up in into chunks so it could hang from hooks in his home made smoker. Brined it first then hung it up to smoke first thing in the morning. It was all most a cold smoke as the apple wood was in the bottom of smoker while the fish hung 5-6 feet above the smoldering apple wood. Take it out late at night and it was gone with in 1-2 days. It was so good. It taste just like smoked salmon. Think the key was very low temp with all day smoke. I miss it. We just picked around the bones.

Don't forget the meat around the head. I like to drop it in boiling water for a few seconds and then scrape off all the scales and use it in a stew or chowder. Those things have a ton of me around their cheeks and the top of the skull.

Hi everybody, we in Hungary love to eat this invasive fish in various forms of dishes. One more tip: make sousage from this fishmeat adding some bacon to it. Smoke it, dry it for some weeks. Delicious.

This recipe has me thinking. I'm going to try boiling it in crab boil, removing the bones, and then make fish cakes with it. I've tried filleting them and cutting out the y-bones and it isn't worth the trouble to me. This looks like the way to do it! Thanks!

We love making salmon patties from canned salmon. Mackerel is a normal substitute. Why NOT this Silver Carp. Can these clean fish! Let other fish species bounce back. I'm gonna try your beautiful wife's recipe with common carp and gar. The nuisance fish of Texas. LOL

If you fillet the asian carp(or a smaller fish whole works also)and steam the fish with ginger and lemon grass till almost done then prepare the oil sauce while its steaming which is simple: chili pepper(depends on how much you can handle),any oil with high heat, lemon grass,ginger,green onions, cilantro and cook until u start seeing browning and then when the fish is almost done take it out from the steamer and pour the hot oil on the fish and re-steam for just enough to cook the fish and it’s done to eat. That’s what i do for any fish that i get or catch. It’s better if the hotter the oil the better the temperature. And be careful with hot oil

Talking about bones in fish. Brim are full of them and we eat them. Pike, musky and other fish are full of bones and people eat them, but the bones in a carp is big thick bones you can't miss them and I eat the Asian carp all the time. They are great.
