Very good episode ! SSMA is a great tool ! I used it for (all on premises) migration from mysql to SQLserver. Using it to bring schema and data to Azure SQL is awesome.

SSMA can be used to migrate from Oracle, DB2, Sybase, MySQL and Access to SQL/Azure SQL. If you are looking to migrate from AWS Redshift to Synapse Analytics you could leverage ADF: Copy data from Amazon Redshift using Azure Data Factory or Synapse Analytics docs.microsoft.com/en-us/azure/data-factory/connector-amazon-redshift?tabs=data-factory

I don't think so. I worked with it and whenever we needed to load the data it just refreshed everything. For that you would need to use ADF or stored procedure in the data part.
