Milky Way Yokan, Japanese Red Bean Jelly | Miki-Neko Kitchen

[Ingredients] 3.5x8.6x2.3 inch pan
◎Milky Way
3g agar powder
2 tbsp granulated sugar
1 tbsp starch syrup
1 tsp milk
2 tbsp butterfly pea flower tea
lemon juice
◎Yokan, red bean jelly
2g agar powder
150g red bean paste
20g cane sugar
salt
[Instructions]
◎Milky Way
1. In a small pot, add 325ml of water and agar powder, dissolve over medium heat.
2. When it boils, adds starch syrup and granulated sugar and simmers on low heat for 2 minutes.
3. Pour mixture into a cake pan until the bottom is covered.
4. Spray gold powder and place gold leaf flakes randomly.
5. In a small glass, put 2 tablespoons of agar mixture and milk. Mix well.
6. Add a butterfly pea bag to the remaining agar mixture in the small pot to make it blue.
7. In another glass, add 2 tablespoons of blue agar mixture and lemon juice and mix. The color will turn purple.
8. Put purple and blue agar mixture little by little into the pan to make a night sky pattern. Add the Milky Way diagonally with white agar mixture. Blur the boundaries of colors.
9. Pour the remaining blue agar mixture on the night sky pattern before it hardens completely.
◎Yokan
1. In a small pot, add 200ml of water and agar powder, dissolve over medium heat.
2. When it boils, add red bean paste, cane sugar and a pinch of salt and simmers on low heat for 2 minutes.
3. Scratch the surface of the Milky Way jelly with a skewer and pour the yokan mixture over it.
4. Refrigerate until thoroughly chilled.
