Surprisingly few people seem to recall that the curios are real. They all are part of Herta's collection and she uses her space station to store (at least some of) them. What we see in SU/DU is her coding them to appear in the simulation.

Nope, it’s because Herta has a small cake. Also, it’s quite likely for Herta to say that her small cake is or has a good taste. Because there’s no clarity on why would Herta automatically assume that by liking the smaller cake means having a good taste by normal sense, it only makes sense if the cake in question is not a literal cake.

That's a nice interpretation, but I think its wrong. Mostly because you are looking at things from a "regular human" not "genius" perspective. It's mentioned both in this and in the Myriad Celestia that solutions are boring. She enjoys cooking, but cooking perfectly following the recipe would, to The Herta, be utterly boring. So she does whatever she fancies and experimentally adds Curio as kitchen utensils/ingredients precisely because "not" knowing how curios will react is what is exciting to her. Notice how it is stated that, for a genius who can solve anything quickly, "nothing is more precious than failure". Ruan Mei, also a genius, might not be that far gone as The Herta, but she understands The Herta's worldview, she prefers the small failed product of The Herta's over the perfect moon-sized cake The Herta also presented, because she understood that it was much more valuable to The Herta. Basically, she's not actually a girlfailure, she can cook perfectly well, but that is worthlessly boring to her compared to experimenting in ways which have not yet been tried or solved, such as curio cooking. TLDR: The Herta loves her Failures, not because she considers them perfect, but because failure itself is exciting to her and the point itself.

I always like when a show's genius interacts with magic and their way of viewing it, the most interesting one being them treating magic as unexplained science so just future tech yet to be discovered. So I'm even more fond of the reverse they did with Herta here, her being witch theme'd is definitely a sign that most if not everyone(including us) can't understand or comprehend how smart she is or how her technology works so all we/they see is a witch performing "magic".

To be entirely fair, there was a large segment of history where science was effectively "magic" to most people, so much so that scientists were actively persecuted because it went against the church's religious standing.
