I don't make a lot of sweet stuff, throat cancer 2 years ago changed my taste buds, and sweet cakes and things don't taste great, but I'm fully recovered now, and most other things are fine, I made a chicken and mushroom pie, and a Chinese chicken and mushroom curry pie in the Hysapienta oven ,they were superb Rik, my mrs said best chicken pie she has ever had.

Mince pies look amazing. I just have a small tip about jarred mincemeat, I can seal mine then store the jars upside down so the moisture is right there when you need it. 👏👏❤️❤️🇬🇧

Hello Rik! Not sure if you will catch this comment but, I made this pastry yesterday, just as you instructed, APART from the use of self raising flour, as I had no plain. I put it in the fridge to rest, covered tightly with cling film. Then I had a ‘funny turn’ as us oldies would say and had to retreat to my bed! Today I am FINE, and I made 3 dozen mince pies with this pastry. Not large ones as you made, and rolled thinner (I am dieting but cant miss out completely!). I allowed the pastry to come to room temperature and hoped it would be OK. Well, this pastry is great - and the overnight stay in the fridge did it no harm at all. They cooked in 12 minutes on 195C in my fan oven. Fabulous! 2 doz for the freezer, and 1 doz for indulging ahead of Christmas!!! Thank you! ❤😊🌟 PS I used every scrap, rolling out 3 times, but these ones still turned out great!

My mom always used self raising flour for her pastry, plus castor sugar and an egg for a rich, sweet shortcrust pastry. SR makes a lighter pastry.

I always cut the lids first from the virgin pastry, saving the re-rolled stuff for the bases as it bakes a little firmer from being handled that bit more.

ATTN CHEF & others: Try squirting a couple of dashes of Angustura Bitters on the mince filling before eating - it just intensifies the satisfaction you will get. I do not know if this is effective to add before baking the pies, but it certainly is absolutely fantastic. A.B. Can be bought at the Food Market and is often sold in the wine store. My Brother gave me this tip back in the 1960’s, I have always added it just before eating a mince tart or pie. Just love a mince pie on steroids.

Always make my own mincemeat…so easy, but use my own ‘exceedingly good’ shortcrust as I don’t like any of the pastry in commercial mince pies (or the mincemeat either)!

Still checking all your recipes Rik, there are sooooo many of which look amazing. You should definitely do a recipe book, especially with those old traditional recipes. Rik i love your shortcrust pastry, wouldn't make any other now as that addition of apple cider vinegar sets it apart from any i have had. I have watched the way you do pastry for these mince pies and they differ from the pastry you do for the small bakewell tarts. What i would like to ask is would this pastry be ok to do with the bakewells instead of the one in that recipe. I like the addition of the cornflour to make the pastry light & soft, just need to know if it would be strong enough to hold the almond batter Thanks Rik

I love mince pies but they hate me. I get a numbing sensation in my mouth and my tongue swells up. It happens a lot with me if I eat anything that is too rich and sweet (another candidate is fudge). So sad as I absolutely love them
