Ruben Sørensen, Product Specialist Preparation, demonstrates Marel’s Minced Meat Line - a complete processing line producing blocks of minced meat.
The line starts with trim inspection. All incoming raw material is fed into the SensorX which uses its x-ray technology to measure fat content and detect foreign objects. Then the pre-grinding process starts and the meat is passed through a grinder before being analyzed for fat content. A mixer then gently mixes the meat to avoid protein extraction. The prepared meat is then ground and formed into blocks. Finally the blocks are packed and labeled.
