He is telling you how to do it. All you need to know. If you have no experience making dashi, or the japanese style pork belly ... there is no reason to try to make a whole ramen bowl. You need to learn about all the raw ingridients, then the process of making each part of the dish, and then combine them to dish Version of Ramen. If you want it to taste well and the way you want it to taste you will have to learn everything about it.

How is he making it look luxurious or is trying to make money? As far as i remember a bowl of ramen with a beer in his NY shops costs about 15-20$ with tip/tax. Regular price for the kind of food he is selling. An Apple is also fast food. Every food can become "fast food". If i want to, i can serve you ANY food within 2-3 minutes of you ordering it at the counter.

this guy can cook, but all his recipes are just Americanized dishes with no homage to traditional ingredients. I bet this guy doesn't even know Shio means salt in Japanese. Shio ramen is just japanese sea salt ramen with a simple broth. Not a mix of meat broth, fish broth, and garlic, onion and apples. I mean his recipe still sounds good, but it's not Shio ramen, so he should stop calling it Shio ramen unless he adds Japanese sea salt to it.

In another video with David chang, Ivan mentions he blends the katsuoboshi with a special salt. His recipe isn't traditional but definitely sounds good.

Eddie Kim I'm mainly referring to the fact that he missed Japanese sea salt in his recipe. which is pretty standard for shio ramen. none the less his recipe still sounds amazing, I just wouldn't call it traditional shio ramen.
