Always go for grass/tall grass/flowers/mushrooms/sea grass/kelp/leaves/sand/gravel/wood/grass blocks/dirt/snow first. Once you gets tools start doing variants like stripped logs, path blocks, farm blocks. If you get shears then shear sheep for wool that you can break or dye/break, plus killing the sheep may drop different items depending on its color. Beds sometimes drop double of their drops.
