Note: on top of the farm set the two redstone clock repeaters both to 4 ticks (not 2). Otherwise the farm will choke on bone meal and waste it due to hopper speeds. [on 1.21 - not sure if it's true for other versions]

One shulker of bone meal = Two shulkers of sea pickels, very nice :) First run seemed to stop for some reason, I was messing around with the mine carts though because the north-south ones were about twice as fast as the east-west ones. Couldn't figure it out, but I'm guessing they're hanging over the center more and pulling from that central minecart which must be aligned that way. I tried putting blocks on the outsides of the minecarts thinking they may be out of range and tightening them up, but it worked better with them loose. Dispenser is too fast for the hopper feeding it, it slows down after it runs out of it's initial supply. Would a dropper or another dispenser work in place of the hopper feeding the dispenser? That could be fed by two hoppers and maintain full speed. Also might feed them with crafters from bone blocks and add two double-speed shulker loaders at the bottom. Convert a double-chest of bone blocks into 32 shulkers of sea pickles :) The farm could run off a comparator on that chest too and turn itself off when it ran out of bone meal...

Works great in 1.21! Would recommend setting the repeaters on the top of the farm around the comparator to 4 ticks each instead of 2 to prevent bone meal wasting, as someone in the comments said.

For anyone wondering if this works on the donutsmp, yes it does work perfectly. edit: it produces about 50k if your chest is full of bone, I actually made double chest of bonemeal instead of one, so I can stay afk for more hours.

Its a known and reported glitch on bedrock. Place blocks underneath and then remove them then it works
