Bosses in the mario series Don't have much health, 1 Hp for most enemies, Heck, the highest health In the main series itself Is 9 Hp from Super Mario galaxy 1 Final Bowser. Mario likely thought that due to how the minecrafters talk about the ender dragon ( They made a game out of killing it) that it's likely didn't have much health and so Mario, not knowing how much health the dragon actually had Likely risked it thinking that it Must have only had 1 maybe 2 HP.
