Instead of turning into melons...How not just make them FAT? I do like the Idea of the enderman having the alternative powers thanks to eating the melon. But I'd rather have them fattened Endermen..instead of Melonman. The same for most mobs. fatten them up instead of melon mode. Tho the creeper cube makes sense in a way. Edit: Instead of a fat evoker. Have him become charged up. or with a more enchanted evoker. instead of fatty evoker. Edit 2 ;Turn the Blaze...Into a Blaze man app-on eating the melon. Why not make this fella WHOLE!
