Mini Black Forest Cake Recipe 🍒 / Mini Forêt Noire / Cherry Chocolate Cake

Today I made a chocolate cake using cherries.
I went to the supermarket and there were some really delicious cherries, so I bought them.
Cherries are so delicious even if you just eat them.
This time I made it in mini size.
This very attractive cake is also called forêt noire or BLACK FOREST.
It is a chocolate cake with chocolate ganache cream and cherry compote layered on top of each other, and the outside is topped with chocolate shavings.
After making the cherry compote, I soaked the cake with the cherry syrup and added the cherry compote to complete the cake.
The chocolate ganache cream is so delicious.
I want to eat it again.
Forêt noire is the French name for “Schwarzwälder Kirschtorte,” a chocolate cake first made in Germany.
It has the meaning of ‘black forest’, so it is called black forest cake in the US and black forest gâteau in the UK.
When making cherry compote, I used kirsch.
The fragrant and tangy scent is so attractive.
If you add them together, the flavor will come out even better.
I think it would be better if you make the cherry compote a day in advance.

● Cake finished size: (8.5cm(D)*7cm (H)*4pcs)
● Ingredients
● Cherry compote
300 g (approximately 30) cherries (including seeds)
70g sugar
20g lemon juice
15~20g Kirsch
1 cinnamon stick
● Chocolate cake
(Mold size: 25cm*35cm)
135g unsalted butter
100g white sugar
65g brown sugar
2 eggs (105-110g)
5ml Vanilla extract
150 g warm milk
15g lemon juice
85g sour cream (or yogurt)
25g water
175g cake flour (can be substituted for all-purpose flour)
55g cocoa powder
4.5 g baking soda
a pinch of salt
● Dark chocolate ganache cream
120g dark chocolate
120g heavy cream (warm)
270g heavy cream (cold)
● Cream for decoration
50g heavy cream

Black forest is a really delicious cake that my family and I like. We once all decided that we should get a black forest cake for some occasion and it was delicious. Black Forest cake has been very popular here quite a few years ago, not all Bakeries take the trouble to do this properly, the chocolate sponge is not soft and has not got a strong but delicious chocolate flavour.
