honestly the test itself is extremely flawed. the sharpest chefs knife couldn't cut through cold butter without either some heat or force. The knife is significantly sharper than before(9.1*x sharper).

The first time I used a knife sharpener I couldn’t help myself, I had to run my finger over it. Had no idea it was going to be that sharp. I sliced open the top of my finger and had a thick flab of skin hanging off. Crazy thing is I didn’t feel any pain. Just a slight burning sensation. **my boyfriend almost passed out when they stitched my finger back together 😂 I thought it was cool to watch but probably cause I couldn’t feel a thing lol

With the box that measures how sharp the knifes are you have to go slowly with them. If you go too fast then the reading will say that the knife is much sharper than it actually is. How slow he goes for the first test is much more accurate than the second, which is faster.

Side note. While 15 degrees does make for an extremely sharp knife, most edge geometry and steels can handle it. VG-10 (N690 in Europe) is the most common steel for stainless Japanese knives. Pushing below 17 degrees edge sets you up for chipping. If hardened metal gets too thin it breaks very easily. It’s rarely sustainable to sharpen like that. It performs well but not for long. The video doesn’t show that part. If the primary and secondary bevel aren’t set up properly, the edge will roll easily and it will feel dull very quickly
