You got the definition of minterms and maxterms mixed up. Minterms is a product of sums (POS) Maxterms is a sum of products (SOP)

I think your videos are focusing on telling how the thing is done but not why the thing is done, i mean why we are doing minterms & maxterms what the objective or whats the problem so we need minterms & maxterms. I have not gone thorough the subsequent videos in your playlist you may have tied up the concepts all together at the end but still why & how should go together.

why SOP should always associated with1? and why POS should always associated with0?

Thats the convention being followed in Boolean Algebra like an axiom. Didn't really find any particular reason as such ✌
