@@mandyeaves5116 if I didn't watch this, I might have blown up! Was letting it heat up for a long time and noticed excessive steam coming from the overpressure valve. But thanks to this video, I noticed it, let it cool, found some debris in the main valve stem that I removed, and (eventually) got it all done. Took like 5 and a half hours after all the heating up and cooling down, but I'm alive 😂.

Yes. Any Pressure Canner can also be used as a Pressure Cooker. But not all Pressure Cookers can be used as a canner. I have used my Mirro Canner as a cooker many many times. :)

My sink is small and cleaning that Presto canner is challenging and takes the life out of me, so I purchased a Mirro 12 qt from eBay and it will come next week. Also I thought would be a point as well, when your Mirro comes to pressure and you put the Regulator on it, it may take up to 20min - 1 1/2 hours for it to start jiggling depending on your temp setting. That’s the only thing missing from this Umaaaazing video! I called Mirro and they explained this to me. In case anyone finds this helpful. Love your videos!!! Please make lots more!!!!!!

@@millermeadows6359 I do have a question…my canner does not have a gauge on, just the rocker. Is this process correct…turn canner on medium, eventually the little red pressure button pops up. Let it steam for 10 minutes then put my 15lb weight on. Once the weight starts to jiggle then I set my timer for 40 minutes. I dry canned potatoes. It seems like a lot of time for a vegetable, so I was wondering at what point I set the timer. Thank you.

Yes...you are doing it correctly. Vent 10 mins...place weight....start timer AFTER the weight starts to jiggle. It does seem like a long time....but short cuts lead to spoiled food on the shelf, and none of us want to lose all of our hard work, time, and money.

@@millermeadows6359 thanks for getting back to me so soon. You truly are a canning angel lol. We taste tested the dry canned potatoes last night and they are great. The carrots not so much. They ended up being quite mushy so will be used in soup. They were canned for 25 minutes.

Your time was correct if done in Pints. I personally prefer dry packed carrots over traditional water packed....as they do not become water logged. The flavor is much better than when canned in water. However, as with any canning situation, your vegetables will be fully cooked, and soft. Theres no way to avoid that unless you choose to pickle them. Try cutting your carrots into spears....long pieces and pack on end in your jar....instead of cutting into coins. You may find that a bit firmer.

This was amazing. I bought an old Mirro from a garage sale and have been wanting to start canning. Mine must be really old because it does not have some of the safety features yours has ( locking lid) but mine is really tall and has 2 grid things to put jars. I’m canning my first vege broth as we speak!

Very interesting video, thank you! I've only pressure canned in Presto canners but found a great deal on a used Mirro 22 (23?) qt canner (in original box with original documents !). Ashamed to say that I did purchase a new gasket for it but in the over 5 years I've owned it I still haven't tried canning with it. Well, you know canning 'season'...you just don't have time for somewhat 'risky' experiments. I'm hoping that in a TEOTWAWKI situation, this canner would function well on an alternate-fuel heat source. Thank you for all these good tips, I'll be ordering a new blow off button.

Also something to always think about is that any stove top PC can be used as a steam canner....or a traditional hot water bather ..... and yes, with the use of some bricks, and a metal grating....you can easily and quickly build a fire pit cooking station outside. Or possibly a rocket stove..... We just need to be aware of to concentrated sources of heat that could possibly warp the canner itself. But there is ALWAYS uses for extra canners imo!

I really enjoyed this video! It was very informative and helped me a lot. I have a couple questions I hope you can help me with: I bought a MIRRO canner 22qt and I have read the directions provided. This is how they explained their operating valves: - Low (A3), (35.4 kPa/5psi) for cooking delicate foods and vegetables - Medium (A2), (69 kPa/10psi) for cooking fish and meat - High (A1), (103 kPa/15psi) for cooking frozen foods and canning Then they note: "Pressure canning can only be done using the high-pressure operating valve (A1)." I live below 1000 feet above sea level. Was my pressure cooker made differently maybe? It is not specified anywhere in the 2 books provided on sea level/elevation. It makes me nervous to do 10psi, when they are stating "canning can only be done using the high-pressure operating valve (A1)" and I was curious what your thoughts were. Another question is in regards to cooking time with 15psi. The book only says "canning will take around 45 minutes to 60 minutes in a large pressure canner filled to full capacity." However, they don't list any time variations in canning or in relation to what is being canned (fruits, meat, broth, soup, etc.). I'm trying to can broth. I would like to can meats in the near future and you mentioned 90minutes at 10psi, but i wasnt sure what my instructions would be other than to follow the books instructions of 15psi for 60minutes.

Oh my gosh! You are so thorough!!! I love how your videos are made to infirm not entertain like so many others think they have to do! I do have a problem with my 8 Qrt. Mirro that I have had for at least 40 years. It is leaking (seeping) at the vent tube. Do I need to replace it or do I need to do some kind of maintenance? I wonder if you have or could make a video specifically relating to the vent tube and how it is supposed to fit as mine as always set screwed in part way? Thank you so much for sharing your Expertise!!!

I would assume you have tried tightening the set screw? You could remove it and try placing a rubber "O" ring also. A bit of pipe tape may help also. Remove your stem, place the pipe tape tightly around the threads and screw it back on. Pipe tape is rated for up to 500°F. If none of those things work, then you should resort to buying a new weight pipe stem. They do still sell them. Wishing you the best of luck with it! 🥰

This was very helpful. Thank you for taking the time to make this video. I have my in-law's old Mirro 12 qt canner (made in 1980) and have actually used it some, although not in a good decade. I never pressure canned much but really need to this year. I did purchase a new gasket this year and the top is a bit snug. Do you still need to oil new canner gaskets so they move more freely?

Yes. I always oil my gaskets New or Old. It really helps maintain them and help them to seal better. Enjoy getting back into pressure canning! Remember that you can also use your canner as a steam canner....for any hot water bath process that is one hour or less.....good for fruit, juices, jams, jelly, tomatoes ect. I have a video on how to use your stove top canner as a steam canner in my studio.

Just came across your video while trying to figure out how my Mirro works. Think it's a 12 qt pot. It has everything like yours except the handles with a screw and the weight is a round ball you take apart depending on what you need. My cousinis great with canning but never used a Mirro. So we tried it for the first time. The weight would never rock or spin. And it came flying off twice from a large amount of pressure. Turned down the heat. Still never rocked or spun. Any ideas why or what we did wrong?!?! Lol! It's an old one. Not sure of year. Will have to look it up again. Thanks! Great video and very informative!

Very good demo, I have a 7 pint mirror pressure canner, been using it for many years. I have recently read that to process food safely the canner should hold at least 4 quarts. My canner only holds pints. I am I at-risk by canning in this small of canner. Booklet states it's a pressure canner.

No. I do not feel you are at risk at all. I truly feel you can do ONE pint, or quart at a time, if needed. A properly functioning canner.....will hold proper pressure....no matter HOW many or few jars are in there. This, again....is my opinion.

You are correct to store your canner as you do. If you store it with the top installed compressed it will wear out much sooner.

I'm very new to canning, as in i've never done it and I love you video. I have an older circa 70's mirro-matic 16 with no lid lock. how do I know it's up to full pressure?

Your lid lock is under the handle, like mine is. You cannot see it. But once you have vented your canner for 10 minutes ...(that steady stream of steam that comes from the weight pipe)..... Place your weight. When it starts to jiggle....you know you are at the proper PSI.....

I swear by a dry powder product called Bar Keepers Friend. Its kind of like Comet if you are familiar with that. Also, the use of Cream Of Tartar in your canning water instead of vinegar....helps to do many things. It keeps hard water deposits off of your jars, it is KINDER to your canning lids and rings and does not corrode them as much as vinegar does....and it also help to clean and brighten your canner. Enjoy your new canner and have FUN!!

I just received a mirro canner from a friend it was made in 1987 but never used came closed with original instructions. It does not mention venting for 10 minutes The directions say put your jars in the canner close canner and put controller on 510 or 15 lb according to chart turn heat on high and large canners it takes up to an hour for control to jiggle the first time depending on starting temperature of food and watering cooker. Air and kanner has been exhausted when controlled jiggles vigorously start your processing time at this point reduce heat but keep it high enough so control jiggles at least three or four times in a minute. I know these canners have a lock lever in the handle drops into lock position a lot of steam escapes this lock handle before the jiggler jiggles. I guess my question is at what point did the USDA said we need to start venting for 10 minutes or is this lock lover handle the 10 minute release and then locks when pressure is there and air is out?

I found a Mirro 12 qt pressure canner at a thrift store yesterday. It is the 92012 version with the ball weight. The lid does not have the handle safety valve like yours. Is it still a good model to use? Would there be safety issues with it? The Canner has never been used. It is all there minus the manual that I have found online. I am learning so much from your video. Thank you so much for sharing your experience and knowledge.

No. Try to tighten it up. Are you sure it's leaking where the weight pipe stem enters through the canning lid? Or is it the steam being directed down from the weight when it's ON the stem?

Wish I would have watched your video before I started…ive gotten lots of siphoning so im thinking my pressure was too jiggly and I pulled off the weight instead of waiting for it to reduce the pressure at the end. If jars have lots of siphoning but have sealed is food still ok?

Sorry about the delay in my response. We have been overwhelmed with Rogers health the past few months. Yes, as long as your jar seals properly, your food is still good. But be aware that siphoning can shorten the time that a lid will STAY sealed....as grease and food particles have been forced out under the sealing compound. It is best to try to avoid overflow and siphoning if at all possible. Heating and cooling your canner slowly help to avoid those things. Wishing you MUCH canning success!!

How much steam coming from the liftpin (lock mechanism) is too much? I replaced the whole assembly and I’m attempting to use my 22 qt PC ( belonged to my grandma and sat in an unheated and uncooled upstairs closet for over 30 years is why I replaced it, the over pressure plug, and seal) and I question if it’s releasing too much and won’t get to pressure. I can’t get the weight to jiggle or anything. I’ve double checked the assembly.

Sorry for the delay in my response. Have been busy with Roger's health and recovery from Cancer. After your lid lock button comes up completely, there should not be any steam coming from it at all. The assembly of the Mirro canners are temperamental. If you have assured that it is assembled correctly....try pressing on the handle, unlocking....locking again....and if all else fails....give the handle a good whack with your hand a couple of times....sometimes that will assist it to pop up correctly. If you still cannot get it to lock up, you can always use your canner as a steam canner......

I'm testing a 22qt Mirro canner I bought second hand. I was at full steam and the lid was locked but a lot of steam was coming out of the handle still. After 10 min I added the weight and there was still a significant amount of steam coming out of the handle and the weight wasn't jiggling. After a few minutes I got nervous and just shut it off. Why would so much steam be coming out of the handle still after it locked?

Check and see if your lid lock button has a rubber seal that maybe needs to be replaced.

I use grapeseed oil on my cast iron skillets.... Would thst be a good oil for conditioning the gaskets? I believe its a high temp oil.

Yes, grapeseed oil does not get "sticky" at high temperatures....it would work really well! So sorry about my delayed response. Roger's battle with Cancer has kept me from my duties here on youtube. I'm slowly getting back to normal life now however, and will be more "present" to answer questions in a more timely manner.

The one that I have doesn't have the lock one the handle and the vent is screwed on. My mother -in -law just gave it to me. I have never pressure canned before, just water bath. It's pretty large.

Question! I loaded up the canner, fired up the stove to bring it to a vent over a med heat. The canner was dripping. So I lowered the heat a smidge, and the canner stopped dripping. Does that sound about right? Or what would you recommend?

In that situation.....I open and shut the lid a couple of times before the lid lock button is up and has the lid locked shut. That a lot of times will reseat the canner gasket and fix the dripping issue. A little drip with not effect your pressure....but if you can get it stopped before the canner is locked shut, it is best to do so.

Sorry to hear that. Did your emergency blow off valve blow out of the lid? Perhaps it ran out of water.... I would suggest unscrewing the handle to release your lid lock mechanism. It may have warped.

I am going to make enchilada/chili verde sauce with my tomatillos and am going to attempt to use my mirro canner, I want to can quarts and my insta pot is for pints only so I will have to dig out my instructions for this but I am going to watch your video again to get tips on the usage. I have another question, can I use my mirro canner for water bathing? I have minimal room in my kitchen and don’t want to get a large water bath canner if my mirro will work? I wish I had ask this question a while ago, if I can WB in my mirro I can certainly SC and I just purchased a large S canner… 😳 Thank you so much and your expertise in PC, WB and SC is so appreciated! Yep. And please follow your book if you wish to. I prefer to have a constant gentle motion....so that I can hear what is going on as I work on other things in my kitchen. Have never ran my canner dry.

All pressure canners should be vented to remove the dead air space that is trapped under the lid when you place it on your canner. Pressure canners function by using steam to transfer the heat properly throughout the unit. The air is expelled during the venting time of 10 minutes and that space is then fully filled with steam. Steam transfers heat better than air.
