A lot of that has to do with that fact that during his invasion, Loki was heavily influenced by the mind stone in his staff to twist his thoughts and fuel his anger without his knowledge. A little insurance policy, courtesy of Thanos. They specifically state this on the official marvel website under the movie’s character description for Loki. You can also see the mind stone’s effects when the avengers are near it and even they start to yell at each other and fall apart under its influence. Similar to how Natasha managed to break the mind stone’s control over Clint by hitting him in the head, Hulk smashed Loki into concrete so hard it had the same effect of breaking its hold on him. That’s why Loki’s personality is much more teasing/mischievous and less megalomaniacal after gets Hulk-smashed and continues on to be the same in Thor Dark World. Hope that explains it.
