it really all comes down to the individual core, some are fare more accurate then MAME, others not so much. MAME has a far greater number of games, but what MiSTer does it does very well. When you use an emulator like MAME it is software tying to recreate all the components of a arcade board or game system, so if the game code says to add these 2 values together and store the output in a particular register MAME will try to replicate this behavior tracking those values all in software. MiSTer works differently using an FPGA it can actually replicate the individual circuits and logic gates at an electronics level essentially reproducing the original hardware. This is very much an over simplification and probably worthy of its own video.
