This whole thing was jacked up from start to finish. It ended up cooking fine and it tasted pretty much like brown sugar mochi. Everyone who tried it said it was good, but no one associated it with kulolo or coffee.
5 c. mochiko (Japanese sweet rice flour)
3 tsp. instant coffee granules
1 box (1 lb.) dark brown sugar
1 tsp. baking soda
1 can (12 oz.) coconut milk
2 1/2 c. water
6-8 greased ti leaves (I say ditch this)
Preheat oven to 350 degrees; line a 13x9-inch baking pan with half of greased ti leaves. In a mixing bowl, combine dry ingredients. Stir in water and coconut milk; mixing well. Pour into prepared pan, top with grease ti leaves; cover pan with foil. (Ditch that method) Place an additional pan of water on the lowest shelf in the oven. (Ditch the water on the lower shelf method) Bake for 1 hour. Cool. Cut into 36 squares.

I can't help but enjoy even the ones you don't love. This makes me think of steamed puddings my grandmother used to make. Not the ingredients of course, but the method. Yes, they come out 'wetter'. It's fun to learn about foods from Hawaii; the differences in ingredients and methods. I found myself wondering what they used on the ti leaves before sprays. Pork fat maybe. Regardless, thanks for the video.

Is it wrong that I smiled when I saw "This whole thing was jacked up from start to finish" in the description and couldn't wait to see why? Yes, it's wrong; but I always love that you share some of life's not-so-perfect recipes with us too :) :)

The batter looked so beautiful. I bet this was so moist. Beth if you cooked it just like a regular cake it probably would have gotten done. It looks so tasty though and I'm so glad it did turn out. Hugs!

yes, lots of people have found it in the Asian aisle in their markets. I do known CA, NC and TN for a fact have it. I hope you can find it!

yup. Found the recipe and had to try it. I think the person who wrote the recipe thought that the ti leaf would give it that 'steamed' in the imu type flavor. It didn't.

I now have a cut and paste answer for this kind of thing. "Please read the description box before asking questions. I anticipate FAQs and put the information there :)" If you only had one box of mochiko flour which mochi would you make? I've been wanting to make one but I'm not sure which to try. :)

Aloha sista! I noticed you put 13.5 oz of coconut milk and the recipe calls for 12 ozs. Could that be why your batter was so wet? I wish you would have recorded it to the end and showed us you cutting it and showing a slice and tasting, meaning when you put it back in the oven after you saw that it was still raw. (I just found your recipe that is the same on someone’s blog. I’m making this for Thanksgiving and crossing my fingers that it turns out.)

trying to figure out what the kulolo part is... reading the recipe it looks like coffee mochi on top of ti leaves. sorry it wasn't what you hoped for.

Do you happen to know if mochiko flour is available on the mainland? :o Cause you make such yummy looking things with it I get jealous. My japanese boyfriend and his mother might appreciate that too and I could earn a few extra points! ;D
