This was amazing--I don't have an oven and I was going to wait to make a starter when I had an oven. Now, I don't have to wait. Thank you for the great idea. Does putting the lid on when you first put the dough into the pan make it rise up like Pita or have you tried that? I think I would like to try that♥

I haven't tried a lid for flatbreads, but I do put one on when I make the thicker English muffins. I think you would want to maybe use the lid for the first half of cooking the flatbread and then take it off for the second side so it will crisp up.
