A lot of People have been asking me for a cocktail featuring Żubrówka, the Polish vodka which famously contains Bison Grass, and since I like to oblige you guys here one is!
Bison Grass is an aromatic herb which grows in the Bialowieza Forest an ancient primeval forest located in North East Poland. It is home to many rare fauna and animals, the rarest of which are the Bison. The favorite food of the Bison is the Bison Grass which grows in an area so remote even the National Park guides have trouble finding it. By sight Bison Grass can be very difficult to distinguish from regular grass and only a handful of families know where it grows, these families supply the grass for all the Żubrówka produced. Żubrówka is also not legal to sell in the US because Bison Grass contains Coumarin a chemical compound which is used to make blood thinners. This chemical has been illegal to sell in the US since the 1950's and is the source of some controversy. Tonka bean, a favorite element of high end cooking also contains coumarin and some of the best restaurants have been busted for it's use in recipes. That said, Żubrówka has two versions one made for the US market and one for the rest of the world. The bottle we use in this episode which is the US market version contains plants and herbs taken from the same forest which are blended to mimic the flavor of actual Bison Grass without the Coumarin (which is the compound which gives Bison Grass it's flavor.) There is however a blade of actual Bison Grass in the bottle. Marius and I are working on getting a bottle from Poland, and we'll keep you posted.
The cocktail in this video was created by bartender Rob Krueger at his bar Extra Fancy in Williamsburg Brooklyn. This cocktail is light and refreshing and one of those perfectly balanced concoctions which really tastes like the sum of it's parts. It's a great summer sipper so go get all the stuff and make it!

I realize this was posted a few years ago but I just discovered this video. I'm flattered that you researched and featured this cocktail. The creation of this drink is one of my favorite memories of the pre-opening of Extra Fancy.

Just a side note , Bison grass is totally legal in Canada and I can confirm you the we get the original Polish Zubrowka North of the border. Just easier for most people to get a bottle that way and try that great Vodka. Thanks for another great video by the way :-)

I've tried this with St Germain instead of Pamplemousse and it's just as good. Also with Tempus Fugit Creme de Banane and still an excellent drink. Got to try this with peach and pear liquors to see how versatile it is. Great drink with the Pamplemousse to begin with, plus with the equal parts not easy to screw up. Marius rules!!!!!

God I want that apron! Also, for the record, Zubrowka is also produced in Belarus, since the forest where bisons live is shared between Belarus and Poland and both countries have access to the grass. Belarus versions are cheaper but still pretty good quality.

When you pronounce "coumadin" the emphasis is on the first syllable. And yes, you can order bison grass online or buy it in many herb stores. I've made bison grass-infused vodka before. Just put the wreath of grass, because that's how it's usually sold, in a jar. Cover with vodka. Shake every day or so. Pass through a fine strainer. There's a chemical used in the large-scale food and perfume trade called coumane which has the same smell and flavor as coumarin without the possibility of turning into blood thinner. Unfortunately I've never been able to find it in less than enormous industrial quantities.

Made this with Giffard Pamplemousse and Titos vodka as I cannot find the Vodka you are using, right now. Saw this video 8/8, made it 8/9. Light and refreshing. Crisp. Great scent from the lime and Pamplemousse. My Titos was in the freezer, not sure if that made a difference other than being cold. Not sweet, but tart enough without needing water to wash out with. Great drink, gets the Wife's Seal of Approval.

Żubrówka rules! Try a fantastic Polish highball called szarlotka (literally "apple pie"): a couple shots of Żubrówka topped up with good fresh or at least unpasteurized CLOUDY apple juice. It's one of the simplest and best highballs out there!

@@piotrszczepankiewicz4744 Warm? With cinnamon? I wouldn't have thought of having it like that. I have tried adding a dash of Angostura because it works so well with apple. Turned out delicious but Angostura kinda overwhelms the subtle grassy flavor of Żubrówka. Szarlotka on the rocks is my summer go-to together with gin & tonic.

Nice! You can try Żubrówka with Apple Cider. Shake 1 1/2 oz Żubrówka, 1 1/2 oz Cloudy Apple Juice, 1/2 oz lemon juice, 1/2 oz honey syrup with ice. Strain over highball filled with ice, top with Apple Cider (not sweet) :) Mega delicious :)

Coincidentally 😉 I have a bottle of Zubrowka(the original found in Canada), a recently open bottle of Lillet blanc, a bottle of grapefruit liqueur and limes in the refrigerator. 😮 guess what I am doing next. Great video.

4:56 You are wrong. Bizon grass is Trawa żubrowa and Żubrówka means Bizon vodka. Like for example we hawe cherry vodka (it's more like liqueur) and we call it wiśniówka (wiśnia = cherry) and walnut vodka = orzechówka. So Bizon grass vodka is like żubrowa because we hawe this weird type of bizon called żubr. That's why żubrówka is called zubrówka

I was given a bottle of polish Žubróvska as a present and tbh I didn’t fancy the grassy flavor at all. Now I know what to do with the vodka: Make the cocktail and then ask my friend to pick up a few bottles of Žubróvska and sell them on Amazon 😇😉

Whats the shelf life of Lillet Blanc? DO you have to keep it in the fridge? I am not sure I could drink a bottle of Lillet in a 6 week window ya see

I'm just going through and watching past videos now 😊 if you haven't found another way to block spam callers, there's one called Robokiller on the playstore that has worked super well for me. Your phone doesn't ring. They kinda intercept the call and spam the spammers back. :)

Also there isn't "the Native American word for bison." North America is home to many language families. Not just languages. Families. They don't all have the same word for bison any more than Hungarian and Italian have the same word for "pig"

I didn't mean to imply that every Native American Tribe would have the same word for Bison, Just that Tonka Bean isn't native to the US so there would have had to been some (possibly) migration of people from south to north and maybe the word developed from that. Just speculating that before there were tribes settled in areas there was a bunch of movement of people over time, about 13,000 years ago. Anyway just pure speculation I don't actually know this or have done any research on it. Oh I also thought we said northern native but didn't say any tribe, but that's really because I didn't know... :)
