Fireweed Jelly
15 c Fireweed
9 c water
11 c sugar
2 pkg pectin
1/2 c sugar
Cowboy Candy
3 pounds Jalapeño
2c apple cider vinegar
6 c sugar
1 tea turmeric
2 tea cayenne
6 tea garlic

That was a LOT of work, my friend! You are an expert canner...you have done that many times before! I love the cowboy candy...I need to make some! I am curious about the fireweed jelly. I hope it tastes wonderful! Hugs and blessings, sweet one!

I am on the hunt for jalapeños!! I have heard of Cowboy Candy, but this is the first I have watched anyone make it. I miss the gardens and canning. But of all the down sizing we have done, we still hold on to jars and canners! You never know!! Loved spending time with you, as always. Day 2- I ordered a case of canned corn! You have me in squirrel mode! ❤️ Momma G. 🐿

Love cowboy candy! I made 16 pints.. added just a few little yellow and red peppers to make it pretty😁. I also prefer making it like relish. Love it on so many things.

See I’m not crazy! I like the slices on like pizza. But I use the “relish! Like a spread on bread sandwiches all sorts of stuff. Oh I love it with homemade Mac and cheese. Yummy!

I have never heard of Fireweed Jelly, or Fireweed for that matter. LOL! I am a mild salsa kind of girl. Even medium heat is way too much for me. It sets my mouth on fire! I have heard that Cowboy Candy is absolutely yummy; however, I could not tolerate the heat. But, both recipes look really good.

I canned 7 quarts of pickles and freeze dried cantaloupe today 🥒 little by little really adds up over time 👍

I am going to have to try that jelly, the leaves on the fireweed are also edible and taste a lot like spinach.

Yeah I saw a whole thing on making tea from the leaves. But the guy fermented it at like 90 degrees and I know he does not live in Alaska if he can keep a jar that hot!

Fireweed leaves I use in the Russian tea I keep on my stove. You can make a mock honey with the fireweed as well as Jelly it is quite tasty. The juice of the fireweed can also be used to make popsicles and mixed with yogart for pops another nice summer treat.

@@modernhomesteadalaska no I am only on KZbin and I only am a viewer. I have lived in Alaska for over 40 years and just learned along the way. I have no interest in joining any other platforms or media. I shouldn't be on KZbin either but I use it everyday for many different learning experiences and just love to see new homesteaders in Alaska as it takes certain people to stay here.

@@modernhomesteadalaska now that I think about it I bet you could even make a syrup with the fireweed and use it on shaved ice, as a pancake syrup or even for baking like in between cakes or as a frosting flavor.

Never tried cowboy candy, it looks promising. When you cook with the juice does it make the food hot or just give flavor? I make Cha Cha which is relish but not hot, the sweetened picked jalapeno relish look very interesting I had to watch it twice. Looking forward to seeing how you use these canned sweetened pickeled items. Just wished we had taste and smelly vision lol

It is spicy. But not overly hot. With the amount of sugar and stuff it’s a very sweet heat. So simple to make and quick to get on the shelves.

What does fireweed jelly taste like? I'm going to see if it grows wild here in the panhandle of Florida. Great video!

It’s a super mild sugar flavor. I don’t think it grows in warmer temps but I could be totally wrong.

I tried to send you are email from the one posted @ Gmail but it was kicked back.i double checked on the letters so not sure. You could use the juice of the fireweed freeze dry it then take the power for making candy, drink mix, frosting and purhaps for the center of a cake even pudding would work. The possibilities are numerous.

I bet you are tired, because that’s a lot and then the sourdough bread, wow I have never heard of fermentation in bags in fridge, I would love to hear more on the sourdough bread recipe and how you ferment in fridge please.

I don’t think it is. In fact it’s sweet and mild if you ask me.

You can remove the seeds if you’re sensitive & it will usually come out mild.
