Fun fact: A great substitute to the scrawny nag (and the barely used Arabian) is the Norfolk roadster. The maxed Norfolk roadsters from getting to level 20 in the moonshiner role are the best since coats are different in stats (rdro is horse racist confirmed????). It’s not like there is an upcoming update that will change this (or literally anything else)

Nothing about the horses matters except the Stamina and HP. The speed difference between them is essentially nothing, and your horse isn't usually taking damage, so maxing out stamina is the most important.
