With my complete lack of freecad fundamental knowledge and the presenter's absence of any explanation of what's going on or what the goal is, I find this video nearly worthless. Perhaps when I learn enough to know what's going on here, it would be worth watching. But then... why would I watch it?

You know, maybe sometimes a clip is not made for everybody... And is not intended as a CONTENT creation for all viewers pleasure but just as a way to share a how-to to somebody or some group that already almost knows what is going on :-)

thank you, but why does freecad always make the Step file very far from the Origin. Quite Annoying to adjust each time.

It does not. The STP geometry is exactly where it was exported from. Also there is Manipulator workbench for the purpose of aligning, moving, centering, ... You can easily align to origin /global coordinate system.
