I heard the flat meat is denser than the point and usually takes longer. Having the flat up makes sense because when you shut the lid it's actually hotter than closer to the fire with the heat rising up and causing a convention effect. Great cook. It looked fabulous. Love me some most brisket!

@@MoesBlackGoldBBQ I built a barrel smoker about 10 years ago but I had trouble keeping the temp steady as the lid didn’t seal well. Still, it was outstanding for brisket. May be time to revisit one (mostly on a Camp Chef pellet smoker now. Getting lazy at 71)

I didn't use the heat deflector. The size of the brisket wouldn't allow me to use it. Since I was hanging it.

Smoked 1st brisket on bronco during weekend. Took awhile to get to temp but it came out really good. I used Killer Hogs TX rub, royal oak hardwood briquets with pecan wood chucks. Yumm!

Looks good bro! I need to cook a 20 lb brisket in Sept for 12 guys - I'm thinkin' I might wanna hang it on my OKJB. I've never hung anything on there yet. I like the easy access to the fire! I never thought of that. I'm thinkin' I'll cook it all night with the help of my thermoworks billows. Wrap it and finish it in the morning. Hold it during the afternoon. Eat it in the evening. Get some practices in if you haven't hung any meat yet. My favorite to hang is half chickens. Sounds like you have a plan for that 20 lb brisket. It's gonna be an easy cook.

I want a bronco now. Looks very solid with no smoke leaks. My WSM very leaky and hard to maintain temp and runs very hot. Requires to many modifications from what I’ve seen on KZbin. I got it for the whole purpose of hanging meats too.

You will not be disappointed with the Bronco. You can use the 2 level cooking grates, you can hang your meats or you can raise the charcoal basket to the top and grill your meats. Temperature control is a breeze once you figure out how to use it.

I want to try a brisket but I sucked at ribs for the longest. I finally figured out my issue with them was the thermal stall and not wrapping them once I learned that it was night and day difference. So maybe eventually I learn enough about brisket that I’ll give it a shot.

All you have to do is practice. Keep cooking, and you will figure it out. It will come to you. To me, brisket is the easiest meat to cook.

Thank you for watching! The whole cook took 11 hours. One charcoal basket of coals lasted the entire cook. I can't recall how much coals were left. When I cook at 250f, I have the top smoke stack wide open and set the side intake to #1. That always does it for me when I'm using Kingsford or B&B charcoal.

Hey Moe I have a question. Do you wait for the "bad" white smoke to clear and turn a thin "blue" smoke before adding your meat? The reason I ask is I noticed you added your brisket while the smoke was still white. But it seemed your brisket turned out great. Thanks for another awesome video!

I add when I noticed the white smoke is going away. Once the meat is on and I have it at temp I want it on, it will burn clean. Everything the lid is opened the charcoal will catch faster and produce the white smoke, but once lid is closed and Bronco dials back into temp, it will burn clean again. Trust me, even if you are just using charcoal, you won't get dirty smoke with the Bronco through out your cooks. Once lid is open and oxygen gets to the fire, dirty smoke starts.

Hey Moe. Great video! I have the bronco pro and it does briskets great on the grill. Havent tried hanging yet. Do you think hanging point down is better than hanging with the flat down? And have you ever tried hanging the brisket sideways so it fits? All my briskets hit the coals if I try hanging them. Im thinking maybe just wrapping the bottom with foil and let it hang on the unlit side of the coals. What do you think?

Thank you for watching. I have not hung a brisket sideways. Since I have the regular bronco, I buy smaller size brisket that will allow me to hang with out the brisket touching the coals. You can hang brisket point down. It'll be just like having the point in the direction of your fire in a traditional offset smoker. My only reason to hanging from the point is because it's bigger than the flat and the hooks can fig deep into the brisket. I have read people separating the point and flat and hanging them if the brisket is to long. I tend to buy briskets that aren't too big. When it comes down to it, get yourself a brisket and experiment with it. You may even find a way better than how I do it.

You're welcome. I have the 18" and briskets that are 10-14 pounds fit good when hanging. They will be smaller once trimmed. The experience in hanging a brisket is awesome. Treat the way you regularly smoke a brisket when you hang it. It will be fun.

Been thinking about getting this smoker. Got a question about the the smoke though. Is it bad smoke coming from the charcoal since they're gradually lighting during the process?

In the beginning there will be a lot of bad smoke, but as you dial in the temperature you want, the coals then will slowly burn and majority of the time you will get a tiny bit of smoke. Obviously if you use wood, you will get plenty of smoke. Once Bronco gets to desired temperature, smoke dials back.
