Moist and Delicious Coconut Cake | Easy No Flour No Butter Coconut Dessert

i n g r e d i e n t s :
• 3 large eggs
• 1/2 cup (100 g) granulated sugar
• 1 tsp vanilla extract
• 1 cup (240 ml) heavy cream (33%fat)
• 2 1/2 cups (250 g) unsweetened (finely) shredded coconut (dry)
• A pinch of salt
• 1 tsp baking powder
Bake the cake at 350ºF/180ºC for 30-35 min.
I used a 9"/23 cm square baking pan.
* The baking time and temperature are only a guide. As every oven is different, you may need to make adjustments to get the right result.
m e a s u r i n g :
1 cup = 240 ml
1 tbsp = 15 ml
1 tsp = 5 ml

​@divinenarisa4311 Perhaps no flour because coconut is like a sponge absorbing liquid, naturally. I've not made the recipe yet because it's like 125 heat index today where I'm staying so don't use the oven (not even the stove top) even though my AC unit is new, it can't keep up with the demand when it's this hot outside. I plan to make this as soon as it cools down a bit outside though. .

Thank you for making this truly flour-free. I get so weary of clicking on recipes that say "no flour" but they use cookies or some other food that has flour in it. I have to avoid white/wheat flour so this is absolutely wonderful and looks so good!

This recipe is absolutely amazing. I used 1/4 cup heavy cream and 3/4 cup milk. It ended up being so delicious. Fantastic healthy recipe and so easy to make. My father is quite picky when it comes to what he likes in sweets and he happily ate the whole slice of this dessert and even appreciated. Thank you so much The cake was over in less than 2 days. Everyone loved it! Going to make it again today.

I did substitute regular sugar with Lanko monk fruit sweetener with erythritol. I can’t have regular sugar. I’m very sensitive to carbs. So this is definitely keto friendly. According to the lose it app and my brand of ingredients; 9 servings yield 70 calories and 0.5 net carbs.
