Got Sole? We did and it was great! Petrale and Sand Sole are abundant along boundary areas commonly targeted for Halibut around Stonewall Bank. They (Sole) look really similar, but the easiest way to distinguish the two is to run your finger from tail to nose. If it's smooth, it's Petrale; if it's like a velvet cat tongue (420 grit sandpaper), you're the lucky holder of a Sand Sole. Both are delicious, but the Sand Sole has a subtle nuttiness to it's flavor and delicate but firm texture. Some would say that makes it an interesting "level up" over Halibut, despite it's abundance. Don't get me wrong, we were out there to get some f-ing Halibut and missed, but we had a dinner I'll never forget and the filets tasted better than our target.
