My dad made this every year at Christmas my whole life. He got the recipe from his dad who made it at Christmas also, and still had his dad's recipe card, which just named the recipe as "Irish potato candy". But it does use one boiled potato. It's great.

I recently tried this recipe. You might like it! *flourless peanut butter cookies* INGREDIENTS 1 cup peanut butter (can use homemade) 1 cup granulated sugar 1 large egg, lightly beaten 1 teaspoon pure vanilla extract Sea Salt for sprinkling INSTRUCTIONS Preheat oven to 350 degrees F. Line a baking sheet with parchment. In a medium bowl, mix together peanut butter, sugar, and vanilla. Then add beaten egg. Mix until fully combined. Using a small ice cream scoop, scoop dough onto prepared baking sheet. Using a fork, press down lightly into each cookie to make crosshatch patterns, but do not flatten the cookie too much. Sprinkle with sea salt. Bake until slightly golden brown, cracked, and still soft to the touch, 10-12 minutes. Do not overbake. Cool completely on pan. May be stored at room temperature for up to 5 days, or frozen, wrapped in parchment and foil and placed in a zipper bag for up to 3 months. Thaw at room temperature for about an hour. Total Time: 27 mins NOTES: Recipe adapted from Claire Robinson

I make this all the time and it’s super sweet but so good. Tip: when you have the log made place in refrigerator for about 30 mins the you can slice it up. I’ve used crunchy peanut butter and the creamy kind. Both are so delicious.

@@mansfield821 nope. It's not cooked. Powdered sugar, potatoes (sometimes people make it without even using potatoes), and egg whites. Mix them together, roll out the dough, slather on peanut butter, and roll it back up and refrigerate. However, I was looking at recipes online and it seems like the raw egg bit has been removed for safety reasons (understandably so). But that's how my mom used to make it. People loved it, but it was too rich and definitely cavity inducing.

I grew up with these it's called potatoes candy u can use left over mashed potatoes plain but it turns into a candy when adding powdered sugar mix til firm flatten it out spread peanut butter and roll it and cut it very sweet but you can put peanut butter or chocolate I prefer peanut butter. My grandmother made them when I was a child I'm now almost 45

Potato Peanut Butter Candy is a Christmas staple in our family! Passed down from my Dad's side from WV. We use real cooked potato, never thought about instant! Fridge will firm it up. Great job!!

Hey Mama, just some helpful tips, 1. You should've use ur flat stove top as a counter top ,it could scratch it or u could damage the heating elements on top,like ur burners..secondly when ur making any kind of dough,if it cracks when ur spreading it out or trying to roll it that means its most likely too dry..u gotta add more water or milk to it..not too much just enough to make the dough stock to itself,and this way when u flatten it out there should be no ripping/tearing, it should be one nice soild sheet no holes! Good luck on all ur future cooking endeavors !!❤

Momma, i got a great recipe for you, just 3 simple ingredients, no cooking. 1/2 c. Peanut butter 1 Tbsp Honey (more if you want sweeter) 1/2 c. Powdered milk Mix it together ... roll into balls. you can also roll it in shreaded coconut or dip it in melted chocolate (chill to harden)

My mum was Hungarian and there was a similar recipe at Christmas for mice shaped lolly type decorations wrapped in foil type paper on string. There was no peanut butter though. They were dried out though. They were hung as decorations on the Christmas tree.

Good outcome from the first time making it. It needs to be rolled almost paper thin, and rolled out on parchment or plastic wrap to keep it from drying out & keep it together. This is by far the best candy to make for any holiday.

Both my Grandma's & my Mom made potato candy w/peanut butter my whole life. My local grocery store even sales it in the bakery now. It was always gobbled up by the whole family. They made the candy for holidays. Bread, I've never seen though.😅 Ok! That's the candy after I watched the entire episode.😂❤❤❤

Me and my mama used to make these at Christmas time...the recipe was in an old church cookbook or a community cookbook I can't remember which but they called it potato candy.... But you got to roll it out a little thinner.... And yes it is very sweet that's why you want it a little thinner because it's so rich ...... And we also did a version of this at Easter one year instead of using the peanut butter....you rolled your dough into little balls and made them look like little egg's and then put them in the fridge to chill then dip them and melted chocolate then they were chocolate Easter eggs 🥚🐣🥜🎄🐇

Growing up in Tennessee my grandmother made this all the time. It is an old fashioned favorite. I am shocked that not everyone had tried this as a child. Around here food city sells it in the bakery section by the pound and is very expensive.

My great grandmother used to make a candy that was similar to this. It calls for carnation evaporated milk and powdered sugar. stir together until like a dough. Put powdered sugar on the container and roll out. Spread peanut butter. Roll up. Put in fridge for a little while. Slices and eat.

I used to make potato candy I would add unsweetened coconut to it as well as icing sugar. It is not as sweet and that way it still gives it the consistency. I would make it into little balls and then dip it in melted chocolate. No peanut butter.

You could probably use Nutella instead of peanut butter for a chocolate hazelnut hit. I noticed the cookbook Momma was using. He’s another KZbinr who tries out recipes from decades past and critiques them, so successful he’s written that book and I’ve seen it in bookstores here in Australia. I have never used instant mashed potato. I imagine it would be good for camping. If the stove top is the only space to follow out the product, whether this recipe or dough, perhaps Momma could buy a large cutting board about 60x40 cm to put on top of it or a pastry mat. It would make cleaning up easier. Although as a rule I would never put anything combustible or melts on a stove top. I suppose if Momma’s cooktop is induction it would be OK.

I used to make this with my grandmother. We boiled and drained the potatoes then added a ton of powdered sugar until it was like a dough. Then you roll it flat, spread peanut butter roll it up and slice it. It’s almost like fudge

My grandma used to make these all the time and she only used the water from boiling the potatoes. According to her, there was more than enough potato starch in the water after boiling potatoes for dinner to make this wonderful candy. That was my favorite growing up. I've seen it in some grocery stores and it's gross. It's not right at all compared to what my grandmother made.
