This is the recipe for classic éclair (pasta choux) prepared by a professional baker at her home kitchen. The recipe is easy for the housewives to make but you need to be careful to follow the recipe correctly for best éclairs.
INGREDIENTS
For the pastry:
100 ml water
100 ml milk
150 gr flour
80 gr butter
a pinch of s
For the cream filling:
500 + 100 ml milk
30 gr corn starch
30 gr flour
100 gr sugar
2 eggs
2-3 tbsp. of pastry cream powder (or 30-40 gr butter/heavy cream instead)
For topping:
200 gr chocolate
30-40 ml vegetable oil
