Awesome. Cool video Legend's. Cheers 🍻. I'm happy for you. I'm a Chef up in Port and I live the area too. For Crayfish, restaurants will charge you $120/$150 per kg. Reds are about $60 per kg, wholesale for fillet. So for a 150/180 gram piece of Red, in a restaurant, for say Fish of the Day Special, it would be $45 plus. 6/7kg fish like that would probably make about 10/15 serves. But saying that, people in restaurants will NEVER get seafood so fresh, so you guys are living the dream. I used to swap big Nannies for steaks in a place I used to work at, and we'd make $500 a fish, for big ones. But to eat seafood just caught, is Epic, and the average punter will never get that. Here in the USA that crawfish. We call them spiny lobster but the weight transfers to 6 1/2 lbs which would cost you around 200 US dollars just for the crawfish

Here's another today- a seafood store in Maine, USA has whole lobster for $15.99/lb IF it's 1.5 pounds. It's living and ya take it home ta cook it. They let ya pay fer all that crap ya can't eat !!

That lobster is probably older that both of you put together. As Steeley Dan once said, "Pan fry the little ones and throw back the big ones" The Bigger the lobster the more EGGS she lays making MORE lobsters. Please make that you final giant lobster and eat the small ones.
