Yes absolutely. You can for example store videos in your GoogleDrive and copy that link into moodle. Just make sure that people with the link have access to the GoogleDrive folder.

How to display all the courses available (not just the enrolled ones) on the course overview page ?

Thanks a lot for your question. On your dashboard you would have to add a block called "courses". The block which then shows the title "course categories" shows all course of your moodle site. I hope that helps.

How to create courses which will be hidden to the students (teachers can edit), and will auto show at the date we set?

all you have to do is put the visibility of the course on 'hide'.
