Thank you! It was the first time I had eaten it. I really enjoyed it, but I think a lot of the flavor came from the sauce. The elk was better, but I really enjoy elk!

I have elk before a my recollection is that there's not a lot of fat and it was easy to overcook. Looks like you did a good job there Matt

Thanks, they really are very lean. Anything cooked longer than med rare makes it so dry. You might as well eat your shoe. 😂
