MOROCCAN FOOD SECRETS REVEALED by MOROCCAN CHEF in FEZ MOROCCO 🇲🇦

Mor Acro finally receives the help he needs in Morocco when he meets Samira, a Moroccan chef from Fez Morocco. Samira is the Riad Anata chef and offers Moroccan cooking classes at Riad Anata that take you from the souk, to the Moroccan kitchen, to the table. Over a few hours we talk Moroccan cooking and the secrets to bring out the best flavors using spices and sifferent cooking techniques. In addition to Chicken tajine we also prepare zaalouk on the style of Fez, based on both egg plant and peppers. We also prepare a potato and carrot salad using chermoula, a marinade popular for fish and meats. In the end a delicious apple dessert is prepared and we enjoy it all on the terrace of Riad Anata. Mor Acro cannot wait to prepare this moroccan feast for his family in America. The secret to Moroccan cooking, a whole lot of love!

that's right , there is no "technique". Samira is about my age (the best to learn from) and when you've been cooking 30-40 years or maybe longer ,cooking is completely intuitive, seasonal, what you have on hand, and follows a "formula" more than a recipe. I just loved watching her food prep, my mouth was watering it all looked so yummy.
