Hey friends and welcome!🌞 This was the most difficult hike I have done in my life. It was all up hill climbing for 5-6 hours and it was challenging to say the least. Heres what I ate on this day, I tried my best to fuel my body in a way that gave me energy yet was enjoyable! The last thing you need on a long hard day is food that isn't yummy!
While on the hike and struggling, the thoughts going through my head where "you got this" , "keep pushing yourself", "keep going", " don't stop", "it'll be worth it", " you can do it", " you are strong enough", "you are capable"... this positive self talk helped me keep going, keep pushing and get to where I wanted to be.
When you are completing the most challenging things in this life, either physically or mentally, you need to speak kindly to yourself. You need to encourage yourself, you need to give yourself the love and attention that will keep moving you forward. You are capable, you are strong, you are powerful. Keep going, keep pushing, keep trying, don't give up my friends!

That was an intense hike! So proud of you! I am unable to do many hikes anymore so I'll just live vicariously through your hike videos. Lol. You're amazing! Thanks for all the vegan recipe ideas. I'm not fully vegan but I like to have a good amount of vegan meals mixed in with my meat based options. My nutritional needs won't allow a full vegan diet but I prefer vegetarian/ vegan over meat truthfully.

I understand your point, but cooking and preparing food is my job and my passion. I personally like being in control in the kitchen. There is nothing wrong with a woman cooking for a man as long as there is balance within their home life and she is appreciated!

@@juliaayers111 I am so agree with you. I truly love and enjoy cooking and eating, and the meal should always be different. Which means I cook at least 3 times a day. And sometimes in company, especially among people that are younger than me, they always wonder why am I the one to cook? Because my husband doesn’t like it and I do. I am cooking and cleaning the house just because I like doing it. But nowadays you feel almost ashamed to say it out loud. What a strange time we’re living in.
